Vegan No Bakes

Did you know that today is National Peanut butter day? Well I don’t often celebrate food observed holidays but this time I couldn’t help myself. I happen to love peanut butter so I’m taking full advantage of the holiday by making some No Bakes. A super quick and easy recipe with no baking required. Plus vegan and delicious.

Vegan No Bakes

Ingredients/Supplies:

The addition of the coconut products adds a delicious peanut/coconutty flavor

2 Cups Sugar

1/4 cup unsweetened cocoa powder

1/2 cup coconut milk

1/2 cup coconut spread

1 teaspoon vanilla extract

1 pinch of salt

1/2 cup chunky all natural peanut butter

3 cups quick cooking oats.

Directions

Cover cookie sheet with parchment paper and set aside.

In a saucepan over medium heat, combine sugar, cocoa, coconut milk and coconut spread. Bring to a boil stirring occasionally. Allow to boil for about 1 minute, then remove from heat.

Stir in salt, vanilla, peanut butter and oats and mix until blended.

Drop teaspoonfuls onto parchment lined cookie sheet.

Chill in fridge for 60 minutes.

If you’re in a festive mood cut the no bakes into shapes like I did above.

Enjoy with a glass of coconut milk.

I kind of like the idea of National food holidays. Now that I’m aware that January 24th is observed for peanut butter I’m on the hunt for more excuses to make delicious and posh treats that I love.
