Chocolate Chili Mini Churros

Switching gears from all things Frozen, to celebrate something much more adult and exciting, Cinco de Mayo. Because I’m not one to ever pass up a homemade margarita or some yummy Mexican eats and after being surrounded by Elsa, Anna and Olaf for the last few weeks, the holiday definitely represents a much-needed break for me. And for added excitement, I’ve cooked up a batch of homemade mini churros dipped in chili spiced chocolate because well, Cinco de Mayo!

I found the recipe for the churros on the Food Network and made the batter dairy-free by using coconut oil instead of butter. And to make them ever lighter, they’re baked and not fried! The chocolate for dipping is also free of dairy with a touch of heat for an added kick.

Totally fitting for a fiesta!

Chocolate Chili Mini Churros | Posh Little Designs

Chocolate Chili Dipped Mini Churros

Homemade mini churros, dipped in a spiced vegan dark chocolate for a sweet, spicy and lightened up twist on the old classic.

Ingredients/Supplies

 Churros

1 cup water

1/2 cup coconut oil or vegan butter

1 cup flour

1/4 tsp salt

3 eggs beaten

Cinnamon Sugar Mixture

1/2 cup sugar

1 tablespoon cinnamon

Additional Items

1 large baking sheet lined with tinfoil and lightly sprayed

Piping bag or large ziplock fitted with a medium-sized star tipped pastry tube

parchment paper

Dipping Chocolate

1 bar of quality vegan dark chocolate

1/8 teaspoon chili powder

Instructions

Pre-heat oven to 400

Combine water, coconut oil/butter and salt in a pot and bring to a boil.

Whisk in flour, stirring quickly until mixture turns into a ball.

Remove from heat and make a well in the center of the ball of dough.

Slowly stir in the eggs a little at a time, mixing continuously to make sure the eggs don’t scramble.

Continue mixing in eggs until they’re completely incorporated into the batter.

Allow batter to cool slightly, then transfer to your piping bag.

Pipe 3 inch long churros into rows on your greased baking sheet.

Bake in the oven for 10 minutes at 400 degrees and then broil on high for 1-2 minutes until your churros are golden brown.

Meanwhile, mix together cinnamon and sugar in a small dish.

Once churros have been removed from the oven, roll them into the cinnamon and sugar mix until fully coated.

Set aside.

Heat your dark chocolate in a microwave safe dish on 30 second intervals, or in a double boiler until completely melted.

Stir in 1/8 teaspoon of chili powder.

Dip the tips of your churros into the chili spiced dark chocolate and place back on the parchment paper to cool.

Sprinkle a light dusting of the chili powder on top of the chocolate dipped churros for garnish.

Homemade Cranberry Sauce

Thanksgiving is less than 24 hours away and I have much to do before my family arrives. That means I’ll be spending the majority of my time in the kitchen today finishing all my prep work, for tomorrow’s festivities.

Luckily I have many recipes that I’ve known for years, some dating back to when I was growing up to rely on. One of my favorites is a 5 ingredient Cranberry sauce that’s fresh, simple, tangy and delicious, making it a must add to your holiday menus.

Because today’s such a busy day, I snapped and edited a few photos of the Cranberry sauce via VSCO Cam and Instagram to share with you today. As you can see I had a little helper, who’s also a big fan of this recipe. If she loved it, I’m certain you will too!

Homemade Cranberry Sauce

Cinnamon sticks, raw turbinado sugar, fresh squeezed orange juice and orange zest blended together with the cranberries for a tart and delicious holiday topping.

Ingredients/Supplies

4 cups of fresh cranberries (rinsed)

1 cup water

1 cup turbinado/raw sugar

2 cinnamon sticks

zest from 1-2 oranges.

Fresh squeezed orange juice from the zested oranges.

Instructions

Place water, orange juice and sugar in a pan and bring to a boil.

Add cinnamon sticks and cranberries and stir until blended.

Cook on medium heat for about 20 minutes stirring occasionally.

Remove from heat and let cool.

Store in the fridge until ready to serve.

This cranberry sauce is the perfect pairing for your favorite holiday dishes and appetizers. Enjoy!

Mini Chocolate and Coconut Popsicles (V)

The other day I picked up a fresh coconut from our local grocery store. Seriously I’m not quite sure what pushed me to grab it because I have no experience working with coconuts, but with the thought that I would figure out how to use it later, I decided to buy it anyways.

After a “Coconut Opening” tutorial on youtube, which took a screwdriver and a hammer, I had success at cracking my very first one! If you follow me on Instagram I’m sure you saw my recent post about my coconut opening success. But…once I opened it I really had no idea how to use it. Perhaps I was a bit reluctant because I quickly discovered that the meat inside of the nut is incredibly difficult to get out of the shell. No joke..I seriously hammered on the coconut over and over again hoping to break it into smaller pieces, but to no avail. After trying numerous tools, I basically just winged it..wrapping a towel around the outside of the shell and scraping out the meat with a knife for what was close to 1 hour. Let’s just say I’m sure there’s a better way to remove coconut meat from the shell, and I don’t necessarily recommend my technique, but after all is said and done I’m glad that I spent an hour digging out slivers of coconut from the stubborn shell. These posh mini pops topped with chocolate and almonds taste good enough to say it was completely worth it!

I’ve paired fresh coconut, coconut cream, vegan dark chocolate and chopped toasted almonds to create this delicious mini frozen pop. Frosty, and creamy with real bits of coconut, and a crunchy dark chocolate shell. I can’t think of a combination that goes better together, a play on Almond Joy..but made using much healthier vegan ingredients and super adorable made in miniature size.

Ingredients/Supplies 

(makes 4 servings)

Meat from 1 half of a fresh coconut (about 1 cup) coarsely chopped or pulsed

1 can of full fat organic coconut milk

4-6 oz bar of vegan dark chocolate (try trader joes)

1/4 cup organic corn syrup or agave nectar

1/4 cup raw almonds (chopped and toasted)

3-4 shot glasses

3-4 popsicle sticks

Instructions

In a medium size bowl, mix the can of full fat coconut milk, chopped coconut and sweetener together until blended. You can add a little extra coconut milk if the mixture seems to thick. I pulsed the mix in my magic bullet to make sure it was incorporated well.

NOTE: The mixture should be thick enough to hold 1 popsicle stick through the center.

Pour coconut sugar mixture into 4 shot glasses.

Insert popsicle sticks into the center of each shot glass.

Place in the freezer for 2 hours or until completely frozen.

Meanwhile, coarsely chop almonds and place in a 250 degree oven to toast for 10-15 minutes. Remove from oven and set aside.

Once popsicles are completely frozen, begin melting your dark chocolate. This can be done in a double boiler, or on 30 second intervals in the microwave.

As soon as the chocolate has completely melted, begin removing your coconut popsicles from the each shot glass. I recommend placing the popsicles on a chilled surface, or only working with one at a time.

Run the outside of the shot glass under warm water for 10-20 seconds. Twist the popsicle stick and your coconut pop should come right out.

Working quickly, spoon some of the dark chocolate over the top of each coconut pop to create a dripping affect. Immediately top with chopped almonds. You’ll need to move fast otherwise the chocolate will harden and the almonds won’t stick.

Place back in the freezer in an upright position.

Repeat for all remaining pops, then keep frozen until ready to serve!

These Mini Chocolate Dipped Coconut Popsicles can be served on a platter of ice for your friends and family to enjoy! They are surely great for cooling off during the warm summer months and worth all the extra effort it takes working with a fresh coconut.

Watermelon Lemonade

My absolute favorite homemade bevy to make as the warmer months approach is fresh lemonade. I’ve made many variations in the past and my daughter’s 2nd birthday was the perfect time to test out a new flavor. This time I switched things up by adding fresh watermelon puree, for a sweet spring-time twist!

The watermelon not only colors the lemonade a beautiful shade of pink (how posh) but it also balances the tart lemony notes, which are smoothed out by the homemade simple syrup. Such a delight! If you have yet to try this kind of lemonade, I highly recommend that you do! It’s fairly simple to make and no store bought brand can compare! It was an instant favorite at our Ombre Minnie Mouse celebration a few weeks back, enjoyed by everyone that attended!

Watermelon Lemonade

Delish for afternoon barbeques and perfect for parties and backyard sipping on sunny filled days. Add a splash of sparkling water, or quickly transform into a refreshing adult beverage by adding fav spirits.

Ingredients:

1 large Pitcher.

6-7 Large lemons juiced. 1 extra lemon for garnish

4 cups of watermelon, cubed puréed and strained

1/2 cup water and 1/2 cup sugar boiled for 1-2 minutes to make a simple syrup

2-3 quarts of purified water. (8-12 cups)

Mint leaves, lemon slices, raspberries and fresh watermelon for garnish

Instructions:

Boil sugar and water over high heat for 1-2 minutes to create a simple syrup. Allow to fully cool and set aside.

While sugar and water are boiling, cut lemons in half and juice them.

Pour lemon juice into a pitcher, using a strainer to the catch seeds.

Measure out 4 cups of cut watermelon and purée using a blender or magic bullet.

Pour puréed watermelon through a strainer to remove pulp and then into the pitcher of lemon juice.

Pour cooled simple syrup into lemon and watermelon mixture and stir.

Top the watermelon, lemon and sugar mixture already  with purified water, 2 cups at a time. Stir, and then taste before you add additional cups of water until the desired flavor is achieved!

I like to serve mine in fancy glasses with a few of my favorite garnishes!

Margarita Ice Cubes

Hello Cinco de Mayo and hello margaritas with a fresh and fun twist!

The recipe is simple and features only a few components that quickly transform into a delightful delicious fresh lime margarita! Just freeze the ingredients into ice cube trays and then top with your favorite tequila. The ice melts and the flavors blend together to make this your go-to beverage for  breezy backyard and summer entertaining!

 A must try!

Margarita Ice-Cubes

The pink himalaya salt adds a savory finish and the perfect touch of posh!

Ingredients/Supplies

1 Ice cube tray

6 large limes juiced + 1 lime sliced and halved for garnish

4 teaspoons orange liqueur – I use Cointreau

3/4 cup simple syrup (see instructions on how to make below)

pink himalaya salt for the rim

1-2 shots of your favorite tequila.

Simple Syrup

3/4 cup sugar

3/4 cup water

Stir sugar and water together and boil on the stove for one minute. Allow to fully chill.

Instructions

Pour fresh squeezed lime juice from 6 limes into a medium-sized bowl. Stir in orange liqueur, and chilled simple syrup until combined.

Place each of the halved lime slices into each individual section of the ice cube tray.

Pour the lime, liqueur and syrup mixture into the ice-cube trays, over the top of each lime.

Place in the freezer and allow to chill for 2-3 hours or until solid.

Rub each cocktail glass in fresh lime and rim in pink himalaya salt.

Once frozen, remove the Margarita Ice Cubes from the tray by using a small thin knife.

Place 3 cubes in each glass, and pour 1-2 shots of tequila (depending on how strong you like it) over the ice-cubes.

Allow a few moments for the cubes to melt and blend with the tequila.

Garnish with a slice of fresh lime and enjoy!

This is such an easy and time-saving solution for entertaining guests! The cubes freeze well and can be made in advance.

This recipe makes about 6-8 cubes. You’ll want at least 3 cubes per glass. These can easily be made non-alcoholic as well!

Make: Hearts Day Partfaits (V)

There’s nothing I enjoy more for breakfast or brunch than fresh fruit and yogurt. Even better, I love combining the two to create a what we all know to be the yogurt parfait. I usually make one in the mornings based on what fruit I have on hand, and I’m certainly not picky, but since Valentine’s Day is coming up quick, today’s version features a few sweet surprise ingredients both healthy and dairy free, just right for celebrating the day of love with the ones you love! And if the grated dark chocolate and homemade crumble wasn’t enough already, I’ve topped them with the tiniest, and cutest little heart picks made from fresh strawberries and toothpicks, for a whimsical finish.

Love at first bite.

Hearts Day Partfaits (V)

The coconut milk yogurt is layered between fresh strawberries & raspberries and a homemade crumble that adds just the right amount of crunch and a grated dark chocolate topping as a decadent garnish. 

Ingredients/Supplies

Four 8 ounce containers of plain coconut milk yogurt (use regular dairy yogurt if you wish)

32 Fresh whole raspberries and 10 fresh strawberries, rinsed and patted dry.

A few squares of dairy free Dark Chocolate (I find mine at Trader Joes)

1 cup Homemade Oat & Pecan Crumble (see recipe below)

1 ziplock bag

Cheese grater (for chocolate)

4 small glass serving bowls or parfait glasses about 8oz.

1 mini heart fondant cutter.

Instructions

Slice strawberries into 1/4 inch thick pieces and cut into heart shapes using a heart fondant cookie cutter. Set aside 4 of the shaped strawberry for the heart toppers. (This is an optional step. If you don’t own a heart-shaped fondant cutter feel free to skip.)

Grate dairy free dark chocolate using a cheese grater, or similar and set aside.

Give yogurt a stir and then pour all 4 containers into the corner of a ziplock bag.

Cut the tip off the corner of the ziplock and begin piping an even layer of the yogurt into the bottom of each glass. Top the yogurt with a layer of the Oat & Pecan Crumble, lastly adding 6 of the fresh raspberries and 6 of the strawberry cutouts to the outer edge of each glass in a circular fashion. Top with an additional layer of yogurt, followed by an even layer of crumble. Finish with 2 fresh raspberries and 3-4 more strawberry hearts. Garnish with grated dark chocolate and one Strawberry Heart Pick.

The picks literally take just seconds to make. Simply cut the strawberries into shapes using your heart fondant cutter and insert one toothpick into the bottom point of each heart. Place inside the center or center back each parfait glass to enjoy the edible cuteness.

Makes 4 Servings.

Homemade Oat & Pecan Crumble

Ingredients

1 cup of uncooked oatmeal

3 tbsp coconut oil

1 tbsp brown sugar

2 tbsp flour

1 tbsp chia seeds

1/3 cup chopped pecans.

Instructions

Preheat oven to 350.

Mix all dry ingredients together.

Pour melted coconut oil over the top of dry ingredients.

Stir ingredients together and pour onto a parchment or foil lined baking sheet.

Bake in the oven for about 20 minutes until golden.

Remove from oven and allow to cool, then it’s ready to be used as a topping.

Create: Berry Infused Sugar – DIY

Sugar is sweet on its own, but when paired with dried berries, and the most adorable printables I’ve come across to date, you have a lovely little DIY gift on your hands, just in time for Valentine’s Day!

The idea for this DIY was inspired of course by the one of a kind Valentine’s prints (see below) from Erisha of A Thing Created, who I’m always delighted to work with! How fabulous are her illustrations?! I love the way she incorporated the heart signage and paired the gingham skirt with the ankle strap heels using her fashion forward approach. Ahh, aren’t these prints just the epitome of sweet, chic and stylish?! And such a fun and modern way to dress up gifts and packages.

My bottles of sugar were immediately transformed into mini Valentine’s fashion moments when I attached them. Like a makeover for the bottles, which tied in beautifully with the red and pink shaded sugar. How fitting for Valentine’s Day and how perfect for the ones you love. These sugars paired with the prints are certainly pretty enough just sitting atop a counter, but they’ll be adored once tasted and used as a surprising replacement for anything that requires sugar! Posh indeed.

Berry Infused Sugar – DIY

Supplies/Ingredients

The sugar infusions only feature two ingredients and are naturally colored. They instantly add a posh twist to baking recipes such as cookies and cakes and also an extra bit of flavor to morning grains, or plain yogurt. 

4 washed miniature bottles with seal (8 inches tall). I found mine at Michaels $1.99 a piece.

4 cups organic white sugar (divided into 2 separate bowls).

1 cup dried strawberries & 1 cup dried raspberries (only use the kind that are crisp and freeze-dried) (divided into 2 separate bowls).

Magic Bullet or blender.

Strainer.

Funnel.

Instructions

Using a Magic Bullet or similar, blend strawberries until they turn into a fine dust (about 30 seconds).

Simply pour blended berry dust into 1 of the bowls of sugar and stir until incorporated.

Repeat these steps to make the Raspberry sugar, being sure to run the raspberry powder through a fine strainer to remove the seeds.

Place funnel into each empty bottle and pour infused sugar over top.

Each bottle will hold approximately 1 cup of the sugar and berry blend.

Once the bottles have been filled and sealed, they’re ready for packaging.

Makes 4 servings.

Valentine’s Packaging

Supplies

Valentine’s Printables from A Thing Created – Etsy

Scissors.

Hole punch.

Four 12 inch pieces of ribbon or bakers twine.

Embellishments (optional)

Instructions

Cut each printable into shape.

Using hole punch, punch one hole into the top left and top right side of each print.

Thread ribbon/twine through the front side of each printable and wrap around the upper neck of the bottle.

Tie tightly and attach any additional embellishments to the side opposite of the printables.

I added leftover glittered clothespins and mini labels to mine for a finishing touch.

Another option would be to actually write and personalize right on the valentine’s prints.
