Coconut Milk Chia Pudding (V)

Happy Friday! I know things have been a little quiet here lately but I’ve been busily working behind the scenes to prepare for my sweet girl’s birthday happening next Saturday. Much more to share on all of that soon, but as for now, I’m thrilled the weekend is here!

And to start my day….my go-to Chia Coconut pudding that takes just moments to prepare. I love that I can make it the night before so it’s ready for me to grab from the fridge in the morning, before my day begins.

My darling Kate Spade mug full of my decaf green tea is also setting the tone.

Chia Banana Pudding | Posh Little Designs

Coconut Milk Chia Pudding (V)

Ingredients/Supplies

1 fancy glass (not required)

1/4 cup Chia Seed

3/4 Cups original Coconut Milk (you can also use almond, cashew, or any other alternative)

Half a banana sliced,

A pinch of cinnamon

Raw pecans and coconut flakes

Instructions:

Soak chia seed in coconut milk overnight or for at least 1 hour so it has time to expand.

When ready to eat, pull from fridge and top with sliced bananas, cinnamon, pecans and coconut. If the chia has soaked up most of the milk, just add more!

Enjoy!

This breakfast is enough to keep me full for the entire morning and is a great post workout meal option.

Consuming Chia seed can assist with weight loss, hydration  and blood pressure reduction. It’s also packed with omega-3 to protect against inflammation. I can’t think of a better way to start my morning!

Smoothie bowls seem to be all the rage right now, and I completely understand why. The idea of blended fruits topped with nuts and seeds, and enjoyed with a spoon, is basically perfection! If you’ve tasted one I’m sure you understand, and if not, the eye candy you’ve most likely seen on instagram is enough confirmation of all the perfection that they are. (hashtag) #smoothiebowl. A fresh and trendy way to reinvent your basic fruit blend and elevate it to a whole new level, that not only looks gorgeous with the intricate arrangements of toppings, but offers plenty of health benefits as well!

Kind of my new obsession, served in a stemless martini glass and garnished with edible blooms for the posh factor.

Posh Fruit Smoothie Bowls (V)

a blend of strawberries, mangos, spinach and almond milk, topped with raw almonds, coconut flakes, chia seeds and blackberries. Packed with vitamins and antioxidants and naturally vegan, dairy and gluten-free. (makes 2)

Ingredients/Supplies.

Smoothie

3 cups frozen organic strawberries

1 cup frozen organic mango

1 cup fresh spinach leaves

1 cup almond milk

Toppings

16-20 organic blackberries halved

2 tablespoons raw almonds

2 tablespoons of chia seed

2 tablespoons raw unsweetened coconut flakes

edible flowers (find them in the herb section of your grocery store) for garnish

Blender or magic bullet

Two clear bowls or glasses for serving. I used stemless martini glasses for a touch of chic.

Instructions.

Place smoothie ingredients into your blender on high until completely blended. You’ll want your smoothie to be thick since you’ll be eating it with a spoon.

Evenly divide smoothie between each glass or bowl.

Place toppings on your smoothies in a row style design.

First add the blackberries (they’re a little heavy so be gentle,) then a row of almonds, followed by a row of chia seeds (use a small spoon to make your row of chia otherwise they’ll go everywhere) lastly a row of raw coconut.

Place your finished smoothie bowls in the fridge until ready to serve.

They’re a great make-ahead breakfast or post workout meal option. I personally love to have one when I finish a Pilates session.

Halloween has to be one of the sweetest times of the year…that is in terms of candy. One of the candies commonly seen around Halloween really brings me back to my childhood. Yup, candy corn. We always had it in our house growing up and my mom still likes it, years later! Although I’m not known for eating handfuls of candy corn myself, I’m completely keen on the colors and love that I had those memories growing up. Which brings me to today’s post, that was of course inspired by candy corn but in a much more fresh and natural kind way.

I’ve taken the shades of yellow, orange and white commonly associated with the sweet treat, and matched it to fruits in the same colors to make healthy and fresh smoothies with much less guilt and a great way counterbalance all the sweets that will be consumed over the weekend.

In addition to these smoothies being healthy and fresh, the mini shot glasses they’re served in make them a fabulous beverage menu option for any Halloween party that you host over weekend! Complete with a tiny candy corn shaped fruit garnishes for a festive finishing touch!

Pineapple Mango Fruit Smoothie

1 1/2 cups fresh pineapple cut into chunks

1/2 cup frozen or fresh mango (if fresh peeled and cut into chunks)

1/3 cup plain coconut milk yogurt

1/4 cup plain coconut milk

1/2 cup ice

Blender or magic bullet

Mini drinking or shot glasses

Funnel

Instructions

Place all ingredients into blender and blend together.

You can add a bit more of each ingredients to reach the desired consistency and bright color.

Pour into shot glasses using a funnel

Serve immediately, or chill in the fridge for up to 2 hours.

Persimmon & Orange Fruit Smoothie

Ingredients/Supplies:

2 ripe persimmons rinsed and cut into chunks

1 large orange peeled and cut into chunks

1/2 natural/organic orange juice

3/4 cups of ice

Blender or magic bullet

Mini drinking or shot glasses

Funnel

Instructions

Place all ingredients into blender and blend together.

You can add a bit more of each ingredients to reach the desired consistency and bright color.

Pour into shot glasses using a funnel

Serve immediately, or chill in the fridge for up to 2 hours.

Banana Coconut Fruit Smoothie

1 ripe banana peeled and cut into chunks

1/4 to 1/3 cup fresh coconut from shell. Peeled and cut into chunks

1/3 cup plain coconut milk yogurt

1/3 cup plain coconut milk

1/2 cup ice

Blender or magic bullet

Mini drinking or shot glasses

Funnel

Instructions

Place all ingredients into blender and blend together.

You can add a bit more of each ingredients to reach the desired consistency and bright color.

Pour into shot glasses using a funnel

Serve immediately, or chill in the fridge up to 2 hours ahead.

Pineapple, Persimmon & Coconut (candy corn) Garnish (optional)

Cut 1 inch chunk of pineapple to resemble the bottom portion of the candy corn and skewer onto a toothpick.

Cut a 3/4 inch chunk of persimmon in a rectangular shape to resemble the middle portion of the candy corn and place on top of the pineapple.

Top with a half-inch chunk of coconut cut into the shape of a triangle.

Repeat these steps for each of the smoothies you’ll be serving.

These smoothies are a great option for kids and adults. I let my girls taste each of the flavors and they very much approved! Feel free to alter the ingredients to include your favorite fruits in these colors.

Red White & Blue Fruit Skewers

This year’s 4th of July celebration is a bit last minute so I’m planing to keep the menu simple. Simple isn’t always an easy task for me because I may have a slight tendency to overdo things…but I’m reminding myself that the simpler I can keep it, the more time I’ll have with my guests and the less time I’ll spend in the kitchen. No brainer!

I really do love food in its natural state so I plan to serve up some fresh fruit from the market as one of our healthy appetizer options. Since we’re repping red white and blue for the 4th of July, I’m sticking with a festive color scheme in America matching hues. No alterations necessary and I can move the fruit directly from packaging to serving dishes in seconds.

The fruit already looks gorgeous on it’s own, but displaying it in cute little dishes will make it look even more fabulous. You can even cut your fruit into shapes as I did using my star cutter and skewer them for a fun holiday touch. Hmm..I may just have to do this simple thing more often!

Ingredients/Supplies

This fruit display is versatile so pick which ones you enjoy the most. I chose jicama because of its white color, but it’s quite starchy and almost potato like. Consider pears, or apples as an alternative.

2 cups raspberries -rinsed

1 half jicama peeled and sliced into 1/2 inch thick rounds

2 cups blueberries -rinsed

fresh lime wedge

Mini star cookie cutter

3 glass dishes for display

Metal skewers or toothpicks

Instructions

Squeeze lime juice over jicama and cut into mini star shapes using a cookie cutter, or cut into even matchstick slices, with a knife.

Place rinsed and prepped fruit into individual dishes, and display in red white and blue order for your guests to enjoy!

These can be made in advance and chilled in the fridge. Serve with skewers or attached to toothpicks as seen below for a quick and easy 1 bite appetizer.

Green Tea Froyo (V)

Frozen yogurt has always been a favorite treat of mine. As a child, I recall frequenting TCBY with my dad and each time we went, like him I would always choose the white chocolate macadamia nut, in a cup with a few candy toppings. Fast forward several years and my love for froyo certainly still exists, but since I now limit my dairy intake, I no longer get to enjoy this delightful treat that brings back such wonderful memories for me. I’m now that girl who goes to the froyo place in search of sorbet and most times I come up empty, but when I do, it’s nice to know that I can recreate a little childhood nostalgia right in my own kitchen. Free of dairy, with no ice cream machine necessary and some added nutrients and antioxidants. Definitely not in the soft serve format and presented at TCBY, but a sufficient way for me to get my froyo fix nonetheless!

As you all know, we’ve got St. Patrick’s Day coming up soon, so in honor of the holiday and all things green, I’m serving up this froyo infused with green tea, using a vegan coconut milk yogurt and shapely shamrock molds for a festive twist. Did I mention I don’t really care what the weather is doing outside?! This anytime treat is the perfect pick me up any time of the day and the individual molds also make them a fun party delight for your St. Patty’s Day celebration!

Green Tea Froyo (V)

The coconut milk yogurt has a natural tang and sweetness that is delightful when infused with the green tea. No additional sugars necessary, vegan and dairy free.

Ingredients

2 10  oz containers plain coconut milk yogurt (I use trader joes brand)

1/2 cup coconut milk (for teabag use only)

Cheesecloth for removing all excess liquid from yogurt

3 bags of your favorite green tea or green tea powder (3 teaspoons of powder or more for desired flavor)

a few fresh spinach leaves for color and added boost (if not using green tea powder)

Instructions

Wrap cheesecloth around a deep bowl and pour coconut milk yogurt over the top to remove excess liquid. This will make the yogurt freeze at a better consistency.  Allow liquid to drain out of the yogurt over a 2 hour period.

Once the yogurt is done draining, place separated yogurt into a dish.

If using green tea bags, heat the coconut milk to desired temperature. Add all 3 tea bags and soak. Remove the hot teabags from the coconut milk and wring them out into the strained yogurt, to infuse the flavors of the green tea.

If you’re using the green tea powder, you can simply add it to the yogurt and skip the step above.

Place the ingredients into a magic bullet and blend away.

I discovered that with the tea bags, the green color really doesn’t come through as much as I would like, so if you’re making these for a St. Patrick’s themed celebration and are missing the soft green, toss a few spinach leaves into the blender with the yogurt infusion for an extra splash of color. You’ll never even taste the spinach and you’ll get an added nutrient boost by adding in the leaves.

Place yogurt and green tea blend into the shamrock molds and freeze for about an hour maybe a little more or less. If you wait too long, the froyo will harden completely and then take quite a while to soften. Place excess in a separate container and also freeze.

Once the froyo has reached the desired consistency, it’s ready to enjoy! Simply scoop into cute little dishes, and top with one of the froyo shamrocks for a decorative finish. Serve immediately.

If you don’t have any issues with dairy, you can always try this technique with regular yogurt, or any yogurt of your choice. (makes about 4 servings)

Make: Hearts Day Partfaits (V)

There’s nothing I enjoy more for breakfast or brunch than fresh fruit and yogurt. Even better, I love combining the two to create a what we all know to be the yogurt parfait. I usually make one in the mornings based on what fruit I have on hand, and I’m certainly not picky, but since Valentine’s Day is coming up quick, today’s version features a few sweet surprise ingredients both healthy and dairy free, just right for celebrating the day of love with the ones you love! And if the grated dark chocolate and homemade crumble wasn’t enough already, I’ve topped them with the tiniest, and cutest little heart picks made from fresh strawberries and toothpicks, for a whimsical finish.

Love at first bite.

Hearts Day Partfaits (V)

The coconut milk yogurt is layered between fresh strawberries & raspberries and a homemade crumble that adds just the right amount of crunch and a grated dark chocolate topping as a decadent garnish. 

Ingredients/Supplies

Four 8 ounce containers of plain coconut milk yogurt (use regular dairy yogurt if you wish)

32 Fresh whole raspberries and 10 fresh strawberries, rinsed and patted dry.

A few squares of dairy free Dark Chocolate (I find mine at Trader Joes)

1 cup Homemade Oat & Pecan Crumble (see recipe below)

1 ziplock bag

Cheese grater (for chocolate)

4 small glass serving bowls or parfait glasses about 8oz.

1 mini heart fondant cutter.

Instructions

Slice strawberries into 1/4 inch thick pieces and cut into heart shapes using a heart fondant cookie cutter. Set aside 4 of the shaped strawberry for the heart toppers. (This is an optional step. If you don’t own a heart-shaped fondant cutter feel free to skip.)

Grate dairy free dark chocolate using a cheese grater, or similar and set aside.

Give yogurt a stir and then pour all 4 containers into the corner of a ziplock bag.

Cut the tip off the corner of the ziplock and begin piping an even layer of the yogurt into the bottom of each glass. Top the yogurt with a layer of the Oat & Pecan Crumble, lastly adding 6 of the fresh raspberries and 6 of the strawberry cutouts to the outer edge of each glass in a circular fashion. Top with an additional layer of yogurt, followed by an even layer of crumble. Finish with 2 fresh raspberries and 3-4 more strawberry hearts. Garnish with grated dark chocolate and one Strawberry Heart Pick.

The picks literally take just seconds to make. Simply cut the strawberries into shapes using your heart fondant cutter and insert one toothpick into the bottom point of each heart. Place inside the center or center back each parfait glass to enjoy the edible cuteness.

Makes 4 Servings.

Homemade Oat & Pecan Crumble

Ingredients

1 cup of uncooked oatmeal

3 tbsp coconut oil

1 tbsp brown sugar

2 tbsp flour

1 tbsp chia seeds

1/3 cup chopped pecans.

Instructions

Preheat oven to 350.

Mix all dry ingredients together.

Pour melted coconut oil over the top of dry ingredients.

Stir ingredients together and pour onto a parchment or foil lined baking sheet.

Bake in the oven for about 20 minutes until golden.

Remove from oven and allow to cool, then it’s ready to be used as a topping.
