Smoothie bowls seem to be all the rage right now, and I completely understand why. The idea of blended fruits topped with nuts and seeds, and enjoyed with a spoon, is basically perfection! If you’ve tasted one I’m sure you understand, and if not, the eye candy you’ve most likely seen on instagram is enough confirmation of all the perfection that they are. (hashtag) #smoothiebowl. A fresh and trendy way to reinvent your basic fruit blend and elevate it to a whole new level, that not only looks gorgeous with the intricate arrangements of toppings, but offers plenty of health benefits as well!

Kind of my new obsession, served in a stemless martini glass and garnished with edible blooms for the posh factor.

Posh Fruit Smoothie Bowls (V)

a blend of strawberries, mangos, spinach and almond milk, topped with raw almonds, coconut flakes, chia seeds and blackberries. Packed with vitamins and antioxidants and naturally vegan, dairy and gluten-free. (makes 2)

Ingredients/Supplies.

Smoothie

3 cups frozen organic strawberries

1 cup frozen organic mango

1 cup fresh spinach leaves

1 cup almond milk

Toppings

16-20 organic blackberries halved

2 tablespoons raw almonds

2 tablespoons of chia seed

2 tablespoons raw unsweetened coconut flakes

edible flowers (find them in the herb section of your grocery store) for garnish

Blender or magic bullet

Two clear bowls or glasses for serving. I used stemless martini glasses for a touch of chic.

Instructions.

Place smoothie ingredients into your blender on high until completely blended. You’ll want your smoothie to be thick since you’ll be eating it with a spoon.

Evenly divide smoothie between each glass or bowl.

Place toppings on your smoothies in a row style design.

First add the blackberries (they’re a little heavy so be gentle,) then a row of almonds, followed by a row of chia seeds (use a small spoon to make your row of chia otherwise they’ll go everywhere) lastly a row of raw coconut.

Place your finished smoothie bowls in the fridge until ready to serve.

They’re a great make-ahead breakfast or post workout meal option. I personally love to have one when I finish a Pilates session.

Also a chic addition to any party menu. If you’re hosting a brunch, bridal or baby shower, these would be as said above, perfection.

Cherry & Coconut Dark Chocolate Cups (V)

Hoping you all had a fabulous weekend! I’m finally feeling better and now that I am, I’m realizing that I’m a little far behind. Seriously! I cannot believe that January is almost over. Of course that means Valentine’s Day is near, so I’m wasting no time jumping in to the themed posts and breaking out the dark chocolate. Yes today’s post is all about dark chocolate and some other delightful fruit pairings to go along with it. Dark chocolate candy cups, with pink fruit filling to be exact. I really don’t think it gets more hearts day appropriate or fitting than that…but for a few extra Valentine’s day points, all the ingredients in today’s post are all natural and free of gluten and dairy, making these chocolate delights a perfect any time treat, even great for sweet gifting as the holiday approaches.

Homemade candy cups made completely free of dairy and gluten, with a crisp dark chocolate outer shell and a tart and creamy coconut cherry filling for Valentine’s Day or any day. 

Ingredients/Supplies

4 oz premium dark chocolate

1/3 cup organic cherry preserves

1 cup shredded flaked coconut

1 tbsp almond milk

20 mini paper cups

1 piping or ziplock bag

blender or food processor

Treat bags and washi tape

Arrange your 20 mini paper candy cups on a tray.

Blend together cherry preserves, coconut and almond milk until a thick paste forms.

Place your dark chocolate in a microwave or double boiler. Heat in 30 second intervals or over the stove until completely melted.

Pour chocolate into the ziplock/piping bag.

Fill the bottom of each candy cup with melted chocolate.

With your hand, pick up each chocolate filled paper cup and drop it lightly on a solid surface to distribute the chocolate evenly. Repeat this step for each candy cup.

Take 1 tsp of cherry coconut filling and form into a small ball using your fingers.

Place each cherry coconut formed round into the center of the chocolate bottomed candy cup leaving space around each side. Repeat this step for each piece of candy.

Pipe chocolate over the top of each candy cup until filling is completely covered.

Again pick up each cup and drop it lightly on a solid surface to evenly distribute chocolate.

Repeat this step for each piece of candy making sure no filling is showing.

Place in the fridge and chill for 1 hour.

Once chilled, these are ready to enjoy!

Since I’m loving gold and metallics so much these days, I quickly decorated white treat bags with a tiny gold, silver and bronze hearts. Placed two candy cups in each little bag, and then finished them off with a piece of pink chevron washi tape. Such a cute and simple way to dress up ordinary bags for hearts day gifting.

Winter is almost here, which for most of us means that we’re a long ways from summer. We actually couldn’t be further in the Pacific NW with the 20 degree temps we’ve been experiencing lately, but that’s not stopping me from having frozen treats on my mind. Maybe it’s all the chilly weather getting to me…it must be, because I’m dreaming of sunshine and 80 degrees.

That brings me to today’s recipe featuring a few of favorite things, like peppermint and chocolate, which I’ve combined together to create frosty and festive popsicle fitting for the Christmas season. And for a little extra holiday cheer, there’s a touch of pink incorporated into each pop, courtesy of the peppermint candies.

Pink Peppermint & Chocolate Popsicles (V)

Creamy coconut milk paired with cool peppermint and sweet dark chocolate makes this recipe an instant seasonal favorite. Not only are these pops dairy free, they’re also completely vegan and free of gluten soy as well, so everyone can enjoy!

Ingredients/Supplies

1 full can of light or full fat Coconut Milk (I used light and prefer Trader Joes coconut milk)

1 teaspoon of Agave Nectar

1/4 teaspoon of pure peppermint oil

1/3 cup crushed peppermint candy discs + 4  solid peppermint discs uncrushed.

1/3 cup of dairy free dark chocolate (chopped into small chunks, about 1/2 inch in size) I found mine at Trader Joes

4 popsicle sticks

4 6-8 ounce containers (i found mini plastic parfait glasses and used those)

parchment paper

Instructions

Combine Coconut milk and agave nectar in a glass bowl. Blend together for desired sweetness. Add in peppermint oil and stir.

Pour in 1/4 cup of the 1/3 crushed peppermint candy discs (the red color of the candy will tint the coconut milk pink), setting the remaining crushed peppermints aside.

Pour in 1/4 cup of the 1/3 chopped dairy free dark chocolate to the coconut milk mixture and set the remaining chocolate aside.

Mix all of the above ingredients together.

Drop each of the remaining 4 peppermint discs into the bottom of the mini parfait glasses.

Pour about 1/2 a cup of coconut peppermint and chocolate mixture into each parfait glass over top the peppermint candy disc.

Repeat this step for all for parfait glasses.

Place on a tray in the freezer for about 1 hour and then insert your popsicle sticks.

Allow another 2 hours to fully freeze.

Line a dish with a sheet of parchment paper and set aside.

Pour remaining crushed peppermint and dark chocolate into a dish and mix together.

Once popsicles are completely frozen, fill up a medium-sized bowl with warm water. Place each popsicle into bowl of warm water to remove from the parfait glasses.

The popsicles will have a layer of melt on them which you can top with the remaining peppermint and chocolate mixture. Repeat these steps for each of the remaining popsicles and place on the parchment paper.

Return to the freezer for another hour.

Serve immediately!

After traveling to NY last month and visiting Ladurée, I’ve become a little more obsessed with french macarons. Not gonna lie, I’ve been thinking about them quite often and regretting not bringing home more from the city. More than anything I think visiting Ladurée has inspired me to become better at making macarons. My mom’s birthday last weekend seemed like the perfect opportunity to try my hand at making them again, this time flavored like german chocolate cake, since that’s her favorite dessert.

I just happened to have all the ingredients on hand in my pantry to make the german chocolate cake macarons, but none left to spare. Of course that meant if I experienced a mess up, it would basically be tragic and more than anything a waste of time, but luckily there were no tragedies in my kitchen last weekend. Instead I was thrilled when I placed the shells in the oven and watched them rise, feet and all. If you’ve ever made french macarons before, the term “feet” is one worth celebrating, and that I did, over a glass of sauvignon blanc.

 These German chocolate cake macarons were only my 3rd attempt at making them, and although far from perfect, they were much improved from my last batch. I credit the awesome recipe for the macarons I found via Wives with Knives which I followed exactly, only substituting the butter and evaporated milk in the german chocolate filling to make the macarons dairy free and do note that the shells and filling is also gluten free.

Seriously if you love french macarons and german chocolate cake, I highly, highly recommend this recipe! They are a little intimidating to make at first, but I assure you with practice they become easier and easier. Next time around I’ll just have to grind down my almond meal to a finer consistency and add a few more folds to the batter for a smoother shinier shell, but the flavor was there nonetheless.

Most importantly, my mom was absolutely delighted by her sweet birthday gift, which was a reward in itself.

And for an extra reward, I enjoyed tea and a few leftover macarons on the morning of the first day of Fall as the rain began to fall. The perfect way to bring in the new season.

Vanilla Caramel Apple Bites (V)

Lately I’ve had Fall and seasonal recipes on the brain, so while feeling a little festive over the weekend I whipped up a simple caramel using only the ingredients that I had  in my pantry. To my surprise, a can of coconut milk and a cup of sugar, if boiled long enough can transform into a delightful dipping sauce that pairs beautifully with apples and just about anything else you could think of. And did I mention that this heavenly sauce just happens to be gluten and lactose free?! Hmmm..thinking it’s safe to say that Fall just got a whole lot sweeter.

Vanilla Caramel Apple Bites

Ingredients/Supplies

1-2 large apples cut into 2 inch cubes

lemon wedge

toothpicks

parchment paper

3/4 cups full fat coconut milk

1 cup raw sugar

1 teaspoon pink himalaya sea salt

seeds from 1 vanilla bean scraped

1 teaspoon coconut oil.

Finely chopped pecans.

Instructions

Line baking sheet or tray with parchment paper and set aside.

Cube apples and squeeze with lemon juice to prevent browning and then top with toothpicks. Set aside.

For caramel, combine raw sugar and coconut milk in a heavy sauce pan over medium heat.

Stir until sugar is dissolved and then allow to boil for 15 minutes until a the caramel is an amber brown.

Quickly remove from heat and gently stir in salt, vanilla bean seeds and coconut oil.

Begin dipping each apple into caramel sauce right away. You can do this by transferring the sauce into a separate dish, or directly from the sauce pan, just be careful not to burn yourself.

Sprinkle each dipped apple with chopped pecans and place on parchment paper to cool.

Serve immediately.

Note: Since this is not your typical caramel it has a tendency to harden as soon as it begins to cool. You can attempt to reheat in the microwave, but you’ll yield your best results by using the caramel sauce immediately.
