Rhubarb Délice Mimosas

This past Sunday I spent the afternoon catching up with my dear sis and mom. These are visits that don’t seem to happen often enough, but that I always look forward to. We all share a love for sparkling wine and champagne, so of course our time together involved bubbly cocktails, plenty of laughs and a few quick appetizers that I whipped up that morning.

I kept the menu simple with fresh fruit, assorted crackers and chips, spiced lentil and apricot hummus, pico de gallo, a variety of nuts, olives and crudité, all of  which paired beautifully with our beverage of choice for the day, Délice Chandon. A new cuvée from Napa that’s super refreshing and perfect for Spring, with fruity notes and a light sweetness. Delicious on its own, but also a rather tasty compliment to the homemade rhubarb fruit puree that I made.

The tartness of the rhubarb blends with the sweetness of the Délice bubbly so very well creating a harmonious Spring time cocktail, that’s a fabulous brunch, afternoons with your favorite girls, or as celebratory beverage option.

It was so good that I’m looking forward to many weekends ahead with this cocktail on repeat.

Rhubarb Délice Mimosas

A sparkling cocktail made with Délice cuvée and fresh blended rhubarb. An instant Spring and Summertime favorite.

Ingredients/Supplies:

1 bottle of Délice Chandon (will make 6 servings)

2 cups fresh rhubarb washed and chopped into chunks

2 tablespoons of raw sugar

1.5 cups of water

mint sprigs for garnish

Blender/Magic Bullet

Instructions

Place your chopped rhubarb into a pot with raw sugar and stir well to incorporate.

Add the water to the pot and bring to a boil stirring the mixture occasionally.

Continue to cook the fruit mixture until the rhubarb breaks down. About 10-12 minutes.

Transfer rhubarb mixture to your blender or magic bullet and puree until completely smooth.

Pour through a fine sieve and transfer to a glass jar.

Chill your gorgeous pink blended rhubarb until ready to serve.

Pour Délice bubbly into each of your champagne glasses filling 3/4 of the way full.

Top with two to 3 teaspoons of rhubarb mixture and stir in with a stir stick, until fully blended and a soft shade of pink.

Garnish with mint leaves and propose a toast!

Sweet, chic and délice.

Of course you can always enjoy this sparkling wine right out of the bottle. With flavors of nectarine, pear and grapefruit you’ll love it on its own or garnished with fresh citrus or herbs.

Raspberry Rose Ice Cubes

February has arrived and now that the Super Bowl is over, I’m switching my focus from football and the painful loss all of us 12s experienced on Sunday, towards some much lovelier things. Yep! I’m choosing not to dwell on what could have been, or what should have been in the final minute of the game and instead drowning my sorrows in pretty pink roses (kidding) but honestly…flowers are truly the way to my heart, especially when I’m feeling a little down. I just adore the way they brighten my mood and bring a smile. So armed with tons of blooms and feeling motivated by the happiness they bring me, I’ve preserved and transformed the leftovers into pretty little beverage garnishes to share with all of you. These cubes are so gorge and perfect for the upcoming arrival of V-Day in soft tinted pink. They’ll fill your glass with floral and fruity notes and dress up your favorite beverages in an instant for easy entertaining.

DIY Raspberry Rose Ice Cubes

Pink petite roses and fresh raspberries frozen into cubes of distilled water to add a touch of posh to your favorite beverage. I chose to pair these cubes with Rhubarb flavored DRY Soda (that just happens to come in a pretty pink bottle.) Did I mention it comes in a pink bottle? Not only that, but the soda is local to Seattle (fitting) all natural, and complements the fruit and floral notes of the cubes beautifully.

Ingredients/Supply List

1 gallon of Distilled water

6-12 fresh rinsed raspberries

6-8 petite pink/white roses (look for organics free of pesticides) Check Trader Joes, Whole foods, or other local organic stores. You can also use home grown.

1 large block silicone ice cube tray (6 cavities) or a regular sized cube tray will do

Instructions

Boil 3 cups of distilled water and allow it to completely cool (this will give your cubes a crystal clear look)

While water is cooling prep your flowers. Remove the blooms from the stem and soak them in water. Allow to soak for 10-15 minutes to remove any residue.

Pull roses from water and remove some of the petals.

Place a few single petals and raspberries into each ice cube cavity. You can switch up the design of each cube by adding a few white rose petals, or an entire bloom to the cavities.

Pour cooled distilled water over the top of each tray and fill about half way full.

Place in the freezer until frozen solid.

Remove from freezer and pour remaining distilled water over the cubes and continue to freeze until they’ve turned into cubes.

Place one frozen floral cube in each glass

and top with Rhubarb DRY soda (or beverage of your choice).

Super Bowl Party Popcorn


It’s officially Friday and we’re now just two days away from the most exciting night in football…not that I’m counting or anything. Do you have big plans for the Super Bowl? Mine are actually pretty low key. I’ll be hosting a small group at my home but I still have plenty of prep work ahead, so my goal is to keep the menu fairly simple. This can sometimes (or all the time) be pretty difficult for me, considering that I’m not really a simple gal, but I’m relying on many of the recipes I created at last year’s Super Bowl celebration, which will definitely make things much easier on me.

Since I’m from the PNW and a serious Seahawks fan, I want to be able to make ahead as much as possible, so I’m able to relax and actually enjoy watching the game come kickoff.  If you can relate and are looking for last minute treat and snack ideas for Sunday, I have you covered with this simple party popcorn recipe.

All you need is a few quick ingredients and M&Ms in shades of your favorite team’s colors. Warning….this will require some color sorting, but it’s totally worth doing to achieve a team themed look! If you have kids at home, sorting is a really fun job for them to take part in.

I cannot forget to mention the DIY miniature footballs. Seriously how adorbs right?! They literally take seconds to make and although tiny, they add so much festive fun to recipe and a taste that’s touchdown worthy!

Super Bowl Party Popcorn

Sweet and salty popcorn mix made with coconut oil, almond butter, M&Ms mixed nuts and pretzels. perfect party food and for celebrating your favorite team during Super Bowl Sunday! Go Hawks!!

Ingredients/Supplies

Popcorn Popper (I own one and love it but you can also make your popcorn on the stove or in the microwave.)

1/3 organic popcorn kernels

1/4 cup coconut oil

1 tbsp orgnaic smooth almond or peanut butter (I use Trader Joes brand)

1 tsp agave nectar

3/4 pretzel bites (TJ’s pretzel sesame squares were used in this recipe, but any pretzel will do)

3/4 cups mixed nuts

1 medium sized bag of regular chocolate M&Ms sorted (colors blue, green and brown for the Seahawks)

Instructions

Make popcorn in popcorn maker. While popping melt your coconut oil in the microwave, or on the stove for 30 seconds. Once melted, add in your almond or peanut butter and agave nectar to the oil and stir until completely blended.

Mix together popped popcorn and mixed nuts until fully incorporated.

Pour oil/butter mixture over the top of your cooked popcorn and mixed nuts. Stir well until coated.

Add in pretzels and stir to incorporate.

Set aside for 30 minutes so the popcorn mix has time to set, then add your colored chocolate M&Ms.

While your popcorn is setting, you can make your mini footballs. Instructions below!

Serve your party popcorn in individual containers for your guests.

DIY Mini Footballs

Mini chocolate footballs made using brown peanut M&Ms and piped white chocolate for the laces.

1 oz white chocolate

sorted brown peanut or almond M&Ms

sheet of parchment paper

1 ziplock bag

Instructions

Place all sorted brown peanut or almond M&Ms on a sheet of parchment paper (M side down).

Place your white chocolate in a heat-proof bowl and microwave in 30 second intervals until melted.

Pour melted white chocolate into a ziplock bag and snip the tip. Make sure that the tip is small enough to create a thin line on each M&M.

Holding your hand steady, pipe one straight line down the center of each peanut M&M.

Complete the look of the football laces by piping 3 crossed lines over the straight center line.

Allow 1 hour to dry.

Once M&M footballs have dried, place one to two in each individual container of party popcorn for a winning finishing touch!

Farewell 2014 + Frozen Berries & Champagne

Raising a glass to 2014 as the year comes to a close. There were so many highlights and bright moments I experienced and I’m incredibly grateful for them all! I can’t think of a more fitting time to share this quick and simple champagne cocktail with you guys. Complete with fresh fruit, blended and frozen into cubes for an easy and last-minute beverage, if you will be hosting a little NYE party this evening. This recipe will take just a few minutes to make and serves as a nice alternative to champagne by itself.

Frozen Berries & Champagne

Ingredients/Supplies

1 ice-cube tray

Champagne glasses or coupes

1 bottle of your favorite bubbles ( I chose Sofia Blanc de Blancs mini’s because they’re pretty, pink and I had them on hand)

2 cups fresh or frozen blueberries and strawberries (or fruit of your choice)

2 tbsp organic fruit juice

strainer

saran wrap

blender

Instructions:

Blend fruit with organic fruit juice of your choice until liquified.

Pour blended fruit through a strainer to catch seeds.

Fill each cavity of your ice-cube tray with blended fruit mixture and cover with saran.

Place in the freezer for at least one hour or until completely frozen.

When ready to enjoy, remove the cubes from the tray and place 1-2 in each champagne glass.

Pour bubbles over top the frozen berry cubes and allow them to slowly melt into the champagne.

Then propose a toast!

During the holiday season, there’s nothing I love more than hosting and entertaining, and when I’m entertaining, having a few tiny treats on the menu is an absolute must. A must, because miniature and one-bite items are easy for guests to enjoy, and much less guilty because of their small size. Not to mention adorable! So yes! When it comes to entertaining, mini is the new black in my opinion and these Lemon Cardamom donuts that I made with my mini pan, are a new favorite. And since Christmas fast approaching, whipping up a batch of these less guilty treats, dressed up with posh embellies, seemed oh so necessary.

Darling and delightful and promised to hit the spot!

Lemon Cardamom Mini Donuts (DF)

A sweet, spicy and aromatic cake donut, topped with a tart glaze and decorated with colors of the season. Not fried, free of dairy and easily converted to gluten-free.

(baked & dairy free – makes about 36)

Ingredients/Supplies

1/4 cup vegan butter

1/4 cup coconut oil melted

1/2 cup powdered sugar

1/4 cup brown sugar

zest from 1 lemon

2 large eggs

1 1/2 teaspoons powder

1/4 teaspoon baking soda

1 teaspoon ground cardamom

3/4 teaspoon salt

1 teaspoon vanilla

2 2/3 cups flour

1 cup coconut milk

decorative sprinkles of your choice; I used silver and white sugar pearls, gold and silver sugar crystals, silver and gold edible glitter and coconut flakes.

Mini donut pan lightly greased

1 ziplock bag

1 piece of parchment paper

Instructions

Preheat oven to 425 degrees

In the bowl of a stand mixer blend together oil, butter and sugars.

Add in eggs, lemon zest and vanilla and mix until combined.

In a separate bowl, whisk together remaining dry ingredients.

Pour a portion of the flour mixture into the egg and sugar mixture alternating into thirds with 1 cup of coconut milk until completely combined.

Pour the mixed batter into the corner of a 1 gallon ziplock bag, cutting the corner with scissors.

Pipe the batter into the greased mini donut cavities filling only about half-way full.

Bake in the oven for 4-6 minutes until a toothpick comes out clean.

Remove from pan and transfer to a cooling rack.

(Makes about 36 mini donuts)

While donuts are cooling, whip up your lemon glaze. It’s a tasty compliment to the spiced flavor and it will only takes 1-2 minutes to make!

Lemon Glaze

Ingredients

1 1/2 cups powdered sugar

1 teaspoon coconut milk

2-3 teaspoons lemon juice

Instructions

In a glass bowl, stir ingredients together until thoroughly combined. If it’s too dry or thick add a few more drops of lemon juice until the glaze is a dipping consistency. Careful not to make it too thin.

Dip the tops of the cooled mini donuts into the lemon glaze.

Place on a sheet of parchment paper, and sprinkle with your favorite toppings.

I went with coconut flakes and silver and gold sparkle for a glamorous touch, but any color will do!

I can envision these mini donuts atop a Christmas or New Years Eve dessert table already.

Winter is almost here, which for most of us means that we’re a long ways from summer. We actually couldn’t be further in the Pacific NW with the 20 degree temps we’ve been experiencing lately, but that’s not stopping me from having frozen treats on my mind. Maybe it’s all the chilly weather getting to me…it must be, because I’m dreaming of sunshine and 80 degrees.

That brings me to today’s recipe featuring a few of favorite things, like peppermint and chocolate, which I’ve combined together to create frosty and festive popsicle fitting for the Christmas season. And for a little extra holiday cheer, there’s a touch of pink incorporated into each pop, courtesy of the peppermint candies.

Pink Peppermint & Chocolate Popsicles (V)

Creamy coconut milk paired with cool peppermint and sweet dark chocolate makes this recipe an instant seasonal favorite. Not only are these pops dairy free, they’re also completely vegan and free of gluten soy as well, so everyone can enjoy!

Ingredients/Supplies

1 full can of light or full fat Coconut Milk (I used light and prefer Trader Joes coconut milk)

1 teaspoon of Agave Nectar

1/4 teaspoon of pure peppermint oil

1/3 cup crushed peppermint candy discs + 4  solid peppermint discs uncrushed.

1/3 cup of dairy free dark chocolate (chopped into small chunks, about 1/2 inch in size) I found mine at Trader Joes

4 popsicle sticks

4 6-8 ounce containers (i found mini plastic parfait glasses and used those)

parchment paper

Instructions

Combine Coconut milk and agave nectar in a glass bowl. Blend together for desired sweetness. Add in peppermint oil and stir.

Pour in 1/4 cup of the 1/3 crushed peppermint candy discs (the red color of the candy will tint the coconut milk pink), setting the remaining crushed peppermints aside.

Pour in 1/4 cup of the 1/3 chopped dairy free dark chocolate to the coconut milk mixture and set the remaining chocolate aside.

Mix all of the above ingredients together.

Drop each of the remaining 4 peppermint discs into the bottom of the mini parfait glasses.

Pour about 1/2 a cup of coconut peppermint and chocolate mixture into each parfait glass over top the peppermint candy disc.

Repeat this step for all for parfait glasses.

Place on a tray in the freezer for about 1 hour and then insert your popsicle sticks.

Allow another 2 hours to fully freeze.

Line a dish with a sheet of parchment paper and set aside.

Pour remaining crushed peppermint and dark chocolate into a dish and mix together.

Once popsicles are completely frozen, fill up a medium-sized bowl with warm water. Place each popsicle into bowl of warm water to remove from the parfait glasses.

The popsicles will have a layer of melt on them which you can top with the remaining peppermint and chocolate mixture. Repeat these steps for each of the remaining popsicles and place on the parchment paper.

Return to the freezer for another hour.

Serve immediately!

Homemade Cranberry Sauce

Thanksgiving is less than 24 hours away and I have much to do before my family arrives. That means I’ll be spending the majority of my time in the kitchen today finishing all my prep work, for tomorrow’s festivities.

Luckily I have many recipes that I’ve known for years, some dating back to when I was growing up to rely on. One of my favorites is a 5 ingredient Cranberry sauce that’s fresh, simple, tangy and delicious, making it a must add to your holiday menus.

Because today’s such a busy day, I snapped and edited a few photos of the Cranberry sauce via VSCO Cam and Instagram to share with you today. As you can see I had a little helper, who’s also a big fan of this recipe. If she loved it, I’m certain you will too!

Homemade Cranberry Sauce

Cinnamon sticks, raw turbinado sugar, fresh squeezed orange juice and orange zest blended together with the cranberries for a tart and delicious holiday topping.

Ingredients/Supplies

4 cups of fresh cranberries (rinsed)

1 cup water

1 cup turbinado/raw sugar

2 cinnamon sticks

zest from 1-2 oranges.

Fresh squeezed orange juice from the zested oranges.

Instructions

Place water, orange juice and sugar in a pan and bring to a boil.

Add cinnamon sticks and cranberries and stir until blended.

Cook on medium heat for about 20 minutes stirring occasionally.

Remove from heat and let cool.

Store in the fridge until ready to serve.

This cranberry sauce is the perfect pairing for your favorite holiday dishes and appetizers. Enjoy!
