Real Parties: Frozen 3rd Birthday

Happy Memorial Day weekend!! I’ve finally gotten around to editing the photos from my sweet girl’s 3rd birthday. I feel like it’s taken me forever, so I’m super grateful for the extra day this week to get some projects out of the way! I hope you’ve all been able to do the same.

As many of you know,my daughter’s birthday theme was Frozen. We transformed our home into a winter wonderland on what turned out to be the hottest day we’ve had this year. 74+ degree weather + family and a bouncy castle for the birthday babe, with some extra special details designed by yours truly.

This year’s birthday was quaint, but absolutely perfect. I personally live for celebrations like these. As the host, there’s nothing greater than being able to sit and relax and enjoy guest’s company after all the hard work and preparation. Our baby girl couldn’t have had a better day.

We chose a color scheme of white and blue with silver accents to capture all things Frozen. I designed the dessert table in all white with a shimmer snowflake backdrop and hanging lights. On the ceiling above the dessert table were an array of snowflakes and tissue poms hung to mimic the clouds and snow. I used all white and crystal clear containers and and stands to arrange the sweets tying in some Frozen character figures that I found at Marshalls and my daughter’s Elsa barbie for a finishing touch.

Our decorations consisted of white tissue poms, hand created tassel garland in all white, jumbo balloons and an olaf balloon. We also blew up a variety of small balloons to mimic snowballs and placed all around our home and surrounding our dessert stations. For the flowers, I went with an all white color scheme, choosing billowy hydrangea, roses and carnations to arrange. Each arrangement was finished with a Frozen character paper design, that I simply made in photoshop. Subtle and not over the tops in terms of character designs, which is one of my signatures.

On the menu. We offered a variety of beverages, from organic juices and San Pellegrino to a homemade Vanilla bean and Blueberry infused Lemonade, with lemons and blueberries for garnish.

For lunch we served all of my daughter’s favorite foods. Chicken sausage and homemade turkey burger sliders, grilled zucchini, fresh salads, crudite and fruit, hummus, olives, gluten free and dairy free crackers and chips.

After lunch we sang happy birthday to our little babe! She had so much fun trying to blow out the candles on her mini cake made by me and my hubs.

Looking back, we may have went a bit overboard on the dessert options, but as they say, one can never have too many.

Everyone always looks forward to my homemade lemon sugar cookies with royal icing. I made them with soft blue and white icing and glitter/snowflake embellishments (coming soon to the shop). I’m certainly not an expert in terms of cookie designs, but I thoroughly enjoy making and decorating them, which is one of the reasons I carry the cutters in my shop! All of the cutter designs I used to create the cookies seen here, are available now!

In addition to the cookies, I made lemon and berry cake pops, dipped in white chocolate, and homemade french macarons filled with white chocolate and a fresh blueberry preserves. This time I tried out Annie’s Eats recipe for macaron shells, which I highly recommend. I loved how they turned out! My most successful batch to date!

One of the many highlights from the party was the sundae station, complete with a sign of Anna asking: Do you want to build a Sundae? This was a little play on the popular song all of us Mommy’s know much better than we’ve ever wanted to, but super worth it to see the look on the kid’s faces. The littles filled their ice-cream cups to the brim with every frozen topping they could point out, including melted chocolate. I’ll be sharing more details on the Frozen sundae bar in an upcoming post, so if you’re planning a frozen themed party in the near future, you’ll be able to make one too!

After gifts, we played pin the nose on Olaf and as guests left, we handed out mini crystal containers filled with white sixlets or “snow” rather.

Each favor container was adorned with a glittered snowflake for a perfectly frozen and posh finishing touch!

This last picture makes my heart completely melt! I can’t get over these adorable smiles and I love how much fun they had celebrating. Seeing the happiness on their faces is what life’s all about!

Frozen Party – Sneak Peek

Happy Friday!! Hope you all had a lovely week and fabulous Mother’s Day as well! My dear sis has been in town from LA so we spent last weekend catching up and also celebrating my baby girl’s frozen themed birthday! I have yet to edit the final photos, but wanted to share with you a few of the party deets in a series that I captured via instagram.

Her party included many signature designs and handmade details. From the homemade french macarons filled with white chocolate and a fresh blueberry jam, to the all white dessert table with icy blue accents. The sweet mini cake for our birthday babe and the white and silver tissue pom and snowflake decor, it was quite possibly the coolest frozen party around!

Chocolate Chili Mini Churros

Switching gears from all things Frozen, to celebrate something much more adult and exciting, Cinco de Mayo. Because I’m not one to ever pass up a homemade margarita or some yummy Mexican eats and after being surrounded by Elsa, Anna and Olaf for the last few weeks, the holiday definitely represents a much-needed break for me. And for added excitement, I’ve cooked up a batch of homemade mini churros dipped in chili spiced chocolate because well, Cinco de Mayo!

I found the recipe for the churros on the Food Network and made the batter dairy-free by using coconut oil instead of butter. And to make them ever lighter, they’re baked and not fried! The chocolate for dipping is also free of dairy with a touch of heat for an added kick.

Totally fitting for a fiesta!

Chocolate Chili Mini Churros | Posh Little Designs

Chocolate Chili Dipped Mini Churros

Homemade mini churros, dipped in a spiced vegan dark chocolate for a sweet, spicy and lightened up twist on the old classic.

Ingredients/Supplies

 Churros

1 cup water

1/2 cup coconut oil or vegan butter

1 cup flour

1/4 tsp salt

3 eggs beaten

Cinnamon Sugar Mixture

1/2 cup sugar

1 tablespoon cinnamon

Additional Items

1 large baking sheet lined with tinfoil and lightly sprayed

Piping bag or large ziplock fitted with a medium-sized star tipped pastry tube

parchment paper

Dipping Chocolate

1 bar of quality vegan dark chocolate

1/8 teaspoon chili powder

Instructions

Pre-heat oven to 400

Combine water, coconut oil/butter and salt in a pot and bring to a boil.

Whisk in flour, stirring quickly until mixture turns into a ball.

Remove from heat and make a well in the center of the ball of dough.

Slowly stir in the eggs a little at a time, mixing continuously to make sure the eggs don’t scramble.

Continue mixing in eggs until they’re completely incorporated into the batter.

Allow batter to cool slightly, then transfer to your piping bag.

Pipe 3 inch long churros into rows on your greased baking sheet.

Bake in the oven for 10 minutes at 400 degrees and then broil on high for 1-2 minutes until your churros are golden brown.

Meanwhile, mix together cinnamon and sugar in a small dish.

Once churros have been removed from the oven, roll them into the cinnamon and sugar mix until fully coated.

Set aside.

Heat your dark chocolate in a microwave safe dish on 30 second intervals, or in a double boiler until completely melted.

Stir in 1/8 teaspoon of chili powder.

Dip the tips of your churros into the chili spiced dark chocolate and place back on the parchment paper to cool.

Sprinkle a light dusting of the chili powder on top of the chocolate dipped churros for garnish.

Salted Pistachio Dark Chocolate Shamrocks (V)

Whenever I need a little pick me up, dark chocolate is my go-to. I just love how well it pairs with different flavors. From fruits and nuts to savories and especially wine, it’s certainly a rich and luxurious treat, and most importantly for me it’s dairy free! Now with St. Patrick’s Day fast approaching I’m elevating this go-to of mine a to give it some holiday appeal. Using shamrocks for good luck, a hint of sea salt and pistachio green and a dusting of edible gold glitter, this sweet treat is now suitable for the upcoming arrival of St. Patty’s Day.

Ingredients/Supplies

8 oz of quality dairy free dark chocolate (3 bars)

1/2 cup coarsely chopped pistachios

1 tsp sea salt

edible gold glitter flakes

shamrock mold

2 ziplocks or piping bag

parchment paper

Instructions

Heat 7 of the 8 oz chocolate in a double boiler or on 30 second intervals in the microwave until fully melted.

Pour melted chocolate into your ziplock or piping bag and pipe into your shamrock mold cavities.

Gently tap the mold on a solid surface until chocolate is evenly distributed.

Allow to chill for 1-2 hours in the fridge until completely solid.

While chocolate is chilling, mix together the sea salt and chopped pistachios.

Once shamrocks are fully chilled, heat remaining 1 oz of chocolate until fully melted and pour into remaining ziplock or existing piping bag.

Flip the shamrocks over onto a sheet of parchment paper to remove chocolates.

Turn them right side up and quickly pipe remaining chocolate in a zig zag motion over top the shamrocks.

Top with chopped pistachios and sea salt, and finish with the edible gold glitter.

Place them back in the fridge for 30 minutes to fully harden.

This is such a quick treat to make and an easy way to elevate plain dark chocolate. You can display these shamrocks on trays or cake stands at your St. Patty’s Day celebration, or package them up and give them away as a bit of sweet good luck for your friends and loved ones.

Sophisticated S’mores (revisited)

Revisiting an old recipe and adding a few new twists because the Oscars are airing on Sunday and they’ve got me feeling inspired. Today’s sweet indulgence, would be perfect for your sunday viewing party. A decadent pairing of gooey marshmallows, homemade graham crackers, and dark chocolate that together create an uber delish s’more that’s richness will capture the elegance of the Academy Awards. But of course it doesn’t end there. This time around I’ve spiked the marshmallows with my favorite elderflower liqueur that just happens to be “gold” in color, like the iconic award itself. And since I’m certain we’ll be seeing plenty tuxedos on the red carpet tomorrow evening, a dark chocolate bow for a touch of whimsy and an oscar worthy finishing touch. If ever there were an award show for desserts, these elevated s’mores would certainly be nominated.

Sophisticated S’Mores (revisited) DF

The St. Germaine elderflower liqueur adds subtle floral notes to the marshmallow and pairs deliciously against the intense flavor of the dark chocolate and the bite of the graham cracker cookies. An unexpected yet harmonious balance of sweet and chic, that’s also dairy free.

St. Germaine Spiked Marshmallows

S'mores

Ingredients

1/2 cup water

1/4 cup St. Germaine Liqueur

3 (.25 ounce) packages unflavored gelatin

2/3 cups light corn syrup

1 3/4 cups white sugar

1 tablespoon lemon juice

1/4 cup cornstarch

1/4 cup powdered sugar

Instructions

Line a 9×9 inch baking dish with plastic wrap that’s sprayed with non-stick cooking spray. Spray additional piece of plastic wrap to cover the top and set aside.

Place 1/2 cup of water in the bowl of an electric mixer and add gelatin to water to soak.

While gelatin is soaking add 1/4 St. Germaine, corn syrup and white sugar to sauce pan. Bring mixture to boil over medium heat for 1 minute.

Pour hot sugar mixture into gelatin and beat on high, using a whisk attachment. Beat for 12 minutes until mix is fluffy and forms stiff peaks. Add in lemon juice and mix until just combined.

Pour mixture into baking dish using a greased spatula to smooth top. Cover marshmallow mixture with remaining prepared plastic wrap, pressing down lightly to seal.

Allow to rest for 4 hours, or overnight.

Mix together cornstarch and powdered sugar in a dish. Using greased scissors, or a knife, cut the marshmallows, dredging lightly in the cornstarch mixture and they’re ready to enjoy.

Store in airtight container.

Homemade Vegan Graham Crackers

Ingredients/Supplies~

1 1/2 cups all-purpose flour

1 cup graham flour

1/2 teaspoon salt

1 teaspoon baking powder

1 cup Earth Balance coconut spread at room temperature (or 2 sticks of butter for non vegan)

3/4 cups light brown sugar

1/4 cup almond milk

parchment paper

Instructions

Add first 5 ingredients into a bowl, mix together and set aside.

Combine coconut spread, brown and brown sugar in the bowl of a stand mixer and mix on medium speed for a few minutes until fluffy.

Reduce speed to low and add dry ingredients. Mix until combined.

Once combined, slowly pour in almond milk and mix until fully incorporated.

The place dough between two sheets of parchment paper and roll to 1/8″ thick.

Move rolled dough to refrigerator to chill for 10 minutes.

Preheat oven to 350.

Line a baking sheet with parchment paper.

Remove dough from fridge and cut into shapes using a cutter of your choice.

Bake for 10 minutes until the edges are golden brown.

Dark Chocolate Bows

Ingredients/Supplies

1 bar of dairy free dark chocolate (I find mine at Trader Joes)

Silicone Bow mold (I used wilton)

ziplock bag.

Instructions

Heat chocolate at 30 second intervals in the microwave until completely melted.

Pipe melted chocolate into the molds and lightly tap on a solid surface to evenly distribute.

Place in fridge to chill for at least 1 hour.

Once chocolate bows have completely chilled, remove from molds and begin assembling your S’mores. You will need 2 graham crackers, 1 marshmallow and 1 chocolate bow for each sweet sandwich.

Macaron Love

French macarons are my fave indulgence and now that Friday has arrived and I have a 4 day weekend to look forward to with my 3 valentines, an early celebration is in order. Nothing like a sweet and delicate fruity treat to get me into weekend mode, and ready for a busy yet fabulous Valentine’s weekend ahead.

 I tell you, of all the macarons I’ve tried, there’s nothing quite better than a Ladureé french macaron, and although I haven’t been in New York or Paris lately, I recently received the Ladureé Macarons recipe book as a gift and instantly fell in love.

Laduree French Macarons | Posh Little DesignsThis book is loaded with beauty, elegance, inspiration and many incredible and unexpected recipes for macaron shells and fillings. Highly recommended. I had such a difficult time deciding which to make first, but with Valentine’s Day on my mind I decided on a batch of the Red Jam Macarons with a classic almond shell. A designer exclusive (yes they have designer exclusives) for Christian Lacroix and suitable for the celebration of love in shades of mauve and pink.

As you will see below, mine are certainly nowhere near the perfection of a Ladureé macaron, but simply the best I’ve ever made at home, with jam filling made from raspberries, strawberries and cherries, which was good enough to eat by the spoonful, no lie! The color of my shells definitely still need work as do my thin “feet” but I know what I did wrong, and cannot wait to make them again.  Now the question is which recipe I’ll try next.

I actually made these macarons earlier in the week and photographed via instagram, but I stored a few in the freezer, which I’m enjoying with a hot glass of tea this morning. My favorite way to kick off the weekend. What’s yours? Perhaps I’ll pair a few more with a glass of champagne tomorrow.

Super Bowl Party Popcorn


It’s officially Friday and we’re now just two days away from the most exciting night in football…not that I’m counting or anything. Do you have big plans for the Super Bowl? Mine are actually pretty low key. I’ll be hosting a small group at my home but I still have plenty of prep work ahead, so my goal is to keep the menu fairly simple. This can sometimes (or all the time) be pretty difficult for me, considering that I’m not really a simple gal, but I’m relying on many of the recipes I created at last year’s Super Bowl celebration, which will definitely make things much easier on me.

Since I’m from the PNW and a serious Seahawks fan, I want to be able to make ahead as much as possible, so I’m able to relax and actually enjoy watching the game come kickoff.  If you can relate and are looking for last minute treat and snack ideas for Sunday, I have you covered with this simple party popcorn recipe.

All you need is a few quick ingredients and M&Ms in shades of your favorite team’s colors. Warning….this will require some color sorting, but it’s totally worth doing to achieve a team themed look! If you have kids at home, sorting is a really fun job for them to take part in.

I cannot forget to mention the DIY miniature footballs. Seriously how adorbs right?! They literally take seconds to make and although tiny, they add so much festive fun to recipe and a taste that’s touchdown worthy!

Super Bowl Party Popcorn

Sweet and salty popcorn mix made with coconut oil, almond butter, M&Ms mixed nuts and pretzels. perfect party food and for celebrating your favorite team during Super Bowl Sunday! Go Hawks!!

Ingredients/Supplies

Popcorn Popper (I own one and love it but you can also make your popcorn on the stove or in the microwave.)

1/3 organic popcorn kernels

1/4 cup coconut oil

1 tbsp orgnaic smooth almond or peanut butter (I use Trader Joes brand)

1 tsp agave nectar

3/4 pretzel bites (TJ’s pretzel sesame squares were used in this recipe, but any pretzel will do)

3/4 cups mixed nuts

1 medium sized bag of regular chocolate M&Ms sorted (colors blue, green and brown for the Seahawks)

Instructions

Make popcorn in popcorn maker. While popping melt your coconut oil in the microwave, or on the stove for 30 seconds. Once melted, add in your almond or peanut butter and agave nectar to the oil and stir until completely blended.

Mix together popped popcorn and mixed nuts until fully incorporated.

Pour oil/butter mixture over the top of your cooked popcorn and mixed nuts. Stir well until coated.

Add in pretzels and stir to incorporate.

Set aside for 30 minutes so the popcorn mix has time to set, then add your colored chocolate M&Ms.

While your popcorn is setting, you can make your mini footballs. Instructions below!

Serve your party popcorn in individual containers for your guests.

DIY Mini Footballs

Mini chocolate footballs made using brown peanut M&Ms and piped white chocolate for the laces.

1 oz white chocolate

sorted brown peanut or almond M&Ms

sheet of parchment paper

1 ziplock bag

Instructions

Place all sorted brown peanut or almond M&Ms on a sheet of parchment paper (M side down).

Place your white chocolate in a heat-proof bowl and microwave in 30 second intervals until melted.

Pour melted white chocolate into a ziplock bag and snip the tip. Make sure that the tip is small enough to create a thin line on each M&M.

Holding your hand steady, pipe one straight line down the center of each peanut M&M.

Complete the look of the football laces by piping 3 crossed lines over the straight center line.

Allow 1 hour to dry.

Once M&M footballs have dried, place one to two in each individual container of party popcorn for a winning finishing touch!
