Rhubarb Délice Mimosas

This past Sunday I spent the afternoon catching up with my dear sis and mom. These are visits that don’t seem to happen often enough, but that I always look forward to. We all share a love for sparkling wine and champagne, so of course our time together involved bubbly cocktails, plenty of laughs and a few quick appetizers that I whipped up that morning.

I kept the menu simple with fresh fruit, assorted crackers and chips, spiced lentil and apricot hummus, pico de gallo, a variety of nuts, olives and crudité, all of  which paired beautifully with our beverage of choice for the day, Délice Chandon. A new cuvée from Napa that’s super refreshing and perfect for Spring, with fruity notes and a light sweetness. Delicious on its own, but also a rather tasty compliment to the homemade rhubarb fruit puree that I made.

The tartness of the rhubarb blends with the sweetness of the Délice bubbly so very well creating a harmonious Spring time cocktail, that’s a fabulous brunch, afternoons with your favorite girls, or as celebratory beverage option.

It was so good that I’m looking forward to many weekends ahead with this cocktail on repeat.

Be sure to add it to your Spring and Summer beverage rotation as well!

Rhubarb Délice Mimosas

A sparkling cocktail made with Délice cuvée and fresh blended rhubarb. An instant Spring and Summertime favorite.

Ingredients/Supplies:

1 bottle of Délice Chandon (will make 6 servings)

2 cups fresh rhubarb washed and chopped into chunks

2 tablespoons of raw sugar

1.5 cups of water

mint sprigs for garnish

Blender/Magic Bullet

Instructions

Place your chopped rhubarb into a pot with raw sugar and stir well to incorporate.

Add the water to the pot and bring to a boil stirring the mixture occasionally.

Continue to cook the fruit mixture until the rhubarb breaks down. About 10-12 minutes.

Transfer rhubarb mixture to your blender or magic bullet and puree until completely smooth.

Pour through a fine sieve and transfer to a glass jar.

Chill your gorgeous pink blended rhubarb until ready to serve.

Pour Délice bubbly into each of your champagne glasses filling 3/4 of the way full.

Top with two to 3 teaspoons of rhubarb mixture and stir in with a stir stick, until fully blended and a soft shade of pink.

Garnish with mint leaves and propose a toast!

Sweet, chic and délice.

Of course you can always enjoy this sparkling wine right out of the bottle. With flavors of nectarine, pear and grapefruit you’ll love it on its own or garnished with fresh citrus or herbs.

Melon & Mint Margaritas

 The weekend is here, the Seahawks beat the Panthers last Sunday and I just recently finished 2nd place in my all girls fantasy football league. That means there’s much to celebrate over the next few days and I’m looking forward to every moment of it! Now tell me, do you love football as much as I do? If so, who’s your team and who will you be cheering for this weekend? Since I’m a Washington gal it’s the Seahawks all day for me! I’m so thrilled that they made it to the NFC Championship game and one step closer to the Superbowl, as predicted!

Since today is “blue friday” (a day designated by our Mayor to honor our team by wearing hawk colors,)  I’m showing some love to the hawks by sporting my ultra glittery football nails, and concocting a new bevvy inspired by the Seahawks and the 12th Man (aka the Seahawks fans). A light and refreshing homemade Melon & Mint Margarita, finished with blue paper straws from the Posh Shop, and a festive 12th Man flag. Color inspiration blue and green.

Melon Mint Margaritas - Seahawks 12th Man | Posh Little Designs

Melon & Mint Margaritas (12th Man)

Honeydew melon paired with tart lime, mint leaves, patron and cointreau. Refreshing, and lightly sweetened with no added sweeteners. Party perfect with rePete’s necessary!

Ingredients/Supplies:

2 cups fresh honeydew melon, cut into chunks or removed with a melon baller if you’re fancy like that.

1.5 ounces (1.5 shots) fresh squeezed lime juice

2 ounces (or 2 shots) premium tequila

4-6 mint leaves

a splash of cointreau

lime wedges for garnish

sea salt for the rim

Navy paper straws

12th Man flags (I simply made mine in photoshop using creating rectangles in Seahawk blue and adding the #12).

Instructions

Place 2 cups of melon into the freezer and allow to chill for an hour

Once chilled and frozen, place in a blender with the next 4 ingredients.

Blend together until smooth.

While blending, rim each glass with the wedge of lime and dip into sea-salt.

Pour your blended margarita into each glass and garnish with lime.

For the paper straw flags, simply print your flags and cut them out, then wrap 1 piece of tape around the straw, leaving enough of an edge to adhere each 12th Man flag.

Place 1 in each melon margarita and enjoy!

This is a super simple and delish beverage option for your football parties this sunday. These could also be made for other teams by changing the fruit and paper straws, but I’m a hawks fan so I’m not even gonna go there.

Farewell 2014 + Frozen Berries & Champagne

Raising a glass to 2014 as the year comes to a close. There were so many highlights and bright moments I experienced and I’m incredibly grateful for them all! Thank you to all of you for your continued support of Posh Little Designs! All of my lovely friends and peers in the blogging community, my customers and those I’ve had the honor of meeting and getting to know thru social networks. I can’t think of a more fitting time to share this quick and simple champagne cocktail with you guys. Complete with fresh fruit, blended and frozen into cubes for an easy and last-minute beverage, if you will be hosting a little NYE party this evening. This recipe will take just a few minutes to make and serves as a nice alternative to champagne by itself.

Frozen Berries & Champagne

Ingredients/Supplies

1 ice-cube tray

Champagne glasses or coupes

1 bottle of your favorite bubbles ( I chose Sofia Blanc de Blancs mini’s because they’re pretty, pink and I had them on hand)

2 cups fresh or frozen blueberries and strawberries (or fruit of your choice)

2 tbsp organic fruit juice

strainer

saran wrap

blender

Instructions:

Blend fruit with organic fruit juice of your choice until liquified.

Pour blended fruit through a strainer to catch seeds.

Fill each cavity of your ice-cube tray with blended fruit mixture and cover with saran.

Place in the freezer for at least one hour or until completely frozen.

When ready to enjoy, remove the cubes from the tray and place 1-2 in each champagne glass.

Pour bubbles over top the frozen berry cubes and allow them to slowly melt into the champagne.

Then propose a toast!

Citrus & Spice Sangria

One of my favorite adult beverages to serve when I’m hosting a party is sangria. I just love how simple it is to make, and how the flavors can be so easily adjusted to match the holiday that you’re celebrating.

Today I tested out a new sangria concoction that I’ll be adding to my Thanksgiving menu next week. The colors and flavor profiles remind me of the season, complete with tangerines, sweet persimmons, cinnamon sticks, vanilla beans, elderflower liqueur and sauvignon blanc.

An instant fave, that truly tastes like Fall in a glass, if there were ever such a thing!

Citrus & Spice Sangria | Posh Little Designs

Citrus & Spice Sangria

A sweet and tart blend of fall fruits and spice, floral liqueur and white wine. The vanilla bean adds a smoothness with fruity floral notes from the liqueur, with a mild cinnamon finish.

Ingredients/Supplies

Medium sized pitcher

1 bottle of your favorite Sauvignon blanc (I chose Sauvignon blanc because it’s less sweet and has many floral notes. You could also try chardonnay or pinot grigio.)

1/2 cup St. Germaine – elderflower liqueur

1/4 cup Cointreau

3 tangerines sliced into 1/4 inch rounds

2 persimmons rinsed and sliced into 1/4 inch rounds (cut a few rounds into quarters and set aside for drink garnishes)

1 vanilla bean bruised

8 cinnamon sticks (2 for sangria remaining for drink garnish)

1 16 oz bottle of club soda or sparkling water

Instructions

Place sliced persimmons & oranges, cinnamon sticks and vanilla bean into your pitcher.

Add St. Germaine, Cointreau and the entire bottle of white wine.

Stir and place in the fridge, allowing flavors to blend for at least 2 hours (make up to 24 hours ahead.)

Add sparkling water or club soda when ready to serve. Add to taste.

Pour sangria into your favorite wine glasses and garnish with cinnamon sticks and quartered persimmons or tangerines.

Watermelon Lemonade

My absolute favorite homemade bevy to make as the warmer months approach is fresh lemonade. I’ve made many variations in the past and my daughter’s 2nd birthday was the perfect time to test out a new flavor. This time I switched things up by adding fresh watermelon puree, for a sweet spring-time twist!

The watermelon not only colors the lemonade a beautiful shade of pink (how posh) but it also balances the tart lemony notes, which are smoothed out by the homemade simple syrup. Such a delight! If you have yet to try this kind of lemonade, I highly recommend that you do! It’s fairly simple to make and no store bought brand can compare! It was an instant favorite at our Ombre Minnie Mouse celebration a few weeks back, enjoyed by everyone that attended!

Watermelon Lemonade

Delish for afternoon barbeques and perfect for parties and backyard sipping on sunny filled days. Add a splash of sparkling water, or quickly transform into a refreshing adult beverage by adding fav spirits.

Ingredients:

1 large Pitcher.

6-7 Large lemons juiced. 1 extra lemon for garnish

4 cups of watermelon, cubed puréed and strained

1/2 cup water and 1/2 cup sugar boiled for 1-2 minutes to make a simple syrup

2-3 quarts of purified water. (8-12 cups)

Mint leaves, lemon slices, raspberries and fresh watermelon for garnish

Instructions:

Boil sugar and water over high heat for 1-2 minutes to create a simple syrup. Allow to fully cool and set aside.

While sugar and water are boiling, cut lemons in half and juice them.

Pour lemon juice into a pitcher, using a strainer to the catch seeds.

Measure out 4 cups of cut watermelon and purée using a blender or magic bullet.

Pour puréed watermelon through a strainer to remove pulp and then into the pitcher of lemon juice.

Pour cooled simple syrup into lemon and watermelon mixture and stir.

Top the watermelon, lemon and sugar mixture already  with purified water, 2 cups at a time. Stir, and then taste before you add additional cups of water until the desired flavor is achieved!

I like to serve mine in fancy glasses with a few of my favorite garnishes!

Margarita Ice Cubes

Hello Cinco de Mayo and hello margaritas with a fresh and fun twist!

The recipe is simple and features only a few components that quickly transform into a delightful delicious fresh lime margarita! Just freeze the ingredients into ice cube trays and then top with your favorite tequila. The ice melts and the flavors blend together to make this your go-to beverage for  breezy backyard and summer entertaining!

 A must try!

Margarita Ice-Cubes

The pink himalaya salt adds a savory finish and the perfect touch of posh!

Ingredients/Supplies

1 Ice cube tray

6 large limes juiced + 1 lime sliced and halved for garnish

4 teaspoons orange liqueur – I use Cointreau

3/4 cup simple syrup (see instructions on how to make below)

pink himalaya salt for the rim

1-2 shots of your favorite tequila.

Simple Syrup

3/4 cup sugar

3/4 cup water

Stir sugar and water together and boil on the stove for one minute. Allow to fully chill.

Instructions

Pour fresh squeezed lime juice from 6 limes into a medium-sized bowl. Stir in orange liqueur, and chilled simple syrup until combined.

Place each of the halved lime slices into each individual section of the ice cube tray.

Pour the lime, liqueur and syrup mixture into the ice-cube trays, over the top of each lime.

Place in the freezer and allow to chill for 2-3 hours or until solid.

Rub each cocktail glass in fresh lime and rim in pink himalaya salt.

Once frozen, remove the Margarita Ice Cubes from the tray by using a small thin knife.

Place 3 cubes in each glass, and pour 1-2 shots of tequila (depending on how strong you like it) over the ice-cubes.

Allow a few moments for the cubes to melt and blend with the tequila.

Garnish with a slice of fresh lime and enjoy!

This is such an easy and time-saving solution for entertaining guests! The cubes freeze well and can be made in advance.

This recipe makes about 6-8 cubes. You’ll want at least 3 cubes per glass. These can easily be made non-alcoholic as well!

Make: Superbowl XLVIII Sangria

Before I get to today’s post, how many of you tuned in to the NFC championship game? Well, being that I’m a native Washington girl, of course I was reppin’ my team, with a 12th Man Mojito in hand. They ended up being quite the lucky cocktail for the afternoon, considering that the Hawks pulled off a win with just a few seconds left in the 4th quarter. Whether you’re a fan of the hawks or not, and whether you agree or not, they are deserving of their spot in the Superbowl! Statistically, they’re one of the best teams of 2013 and I’m thrilled that they made it! I’m also thrilled that they’re going up against the Broncos, because I like them as well! Not quite as much as the Seahawks, but honestly I couldn’t see it any other way! The Broncos have an incredible offense and that paired with the top defense in the league means we’re in for a fantastic game!

I’ll be hosting a very quaint Superbowl party at my home this Sunday and one of the drinks on the menu is a light and refreshing sangria which I’ve appropriately titled Superbowl XLVIII Sangria. I’m a big fan of the recipe because it’s simple and I can make it ahead of time, with easy refill options as the day goes on. This Sangria is also wonderful because it’s very versatile. Of course, I’m a Seahawks fan so the version I’m sharing with you today includes fruit in a blue and green color scheme, topped off with Wild Lime Soda DRY Soda….you know, the less sweet all natural soda that just happens to be my favorite, and is also local to Seattle. What a fitting way to represent our team this Sunday!

This recipe is ideal for those non beer drinking Seahawks fans like myself. Light and refreshing with subtle sweet and tartness. The addition of blueberries and fresh honeydew melon matches the color scheme of our team, and the football cutout shapes add a touch of whimsy making this beverage a fabulous option for your Superbowl Party! The local soda from DRY adds a tasty finishing touch!

Feel free to switch out the fruit to match the team you’re cheering for. For example cheering for the Broncos? Use Oranges and Blueberries.

INGREDIENTS

1/4 cup fresh squeezed lemon juice.

4 key limes. Slice two into rounds, and 2 into quarters for the drink’s garnish.

1/4 of a honeydew melon cut into 1” rounds and then cut into football shapes using a mini football cookie cutter (optional)

1 cup fresh blueberries washed.

1 bottle of your favorite Riesling or Chardonnay. Use Riesling if you like your beverages a little sweet.

1/2 cup Cointreau.

2 bottles Wild Lime DRY Soda chilled.

Ice.

INSTRUCTIONS

Place lemon juice, and sliced limes in the bottom of a large pitcher and stir together, muddling the limes a bit to release their juices.

Add in remaining fruit and stir.

Pour in the full bottle of wine, and Cointreau. Stir and place in the fridge for about 2 hours.

Add chilled soda right before serving!

What a great way to tie in the Hawks color scheme. I chose to use mason jars instead of wine glasses because I felt like they fit better with the Superbowl theme, but feel free to serve this cocktail in any glass that you’d like!

You can garnish with green paper straws, quartered limes and fresh blueberries. The straws can be found in my Etsy shop. The Seahawks logo was attached using stickers that I found online.

Do you have plans for the Superbowl? A few months back I predicted that both the Hawks and the Broncos would go all the way and since I’m a fan of both teams, I’m excited to see how it all plays out! Of course, I’ll be cheering for my Hawks and I’m hoping this cocktail is just as lucky as my last one! Today while at the grocery store to get items for Sunday, I attempted to pickup some bags of skittles in honor of Marshawn Lynch and they were completely sold out of the original flavor. I guess that just shows you how serious the 12th man fans are!
