TGIF + Eggnog French Macarons

Celebrating the fact that Friday has arrived with a warm mug of tea and sweet macarons, because well, it’s just been one of those weeks. An extra long one to be honest, so I’m looking forward to the weekend ahead and kicking it off with a few of my favorite little things.

It truly is all the little things that I love to get lost in, even if only for a few moments, until it’s back to business as usual.  Little things like this gold monogram mug from Anthropologie which is perfect for holding my oversized serving of decaf chai (with extra almond milk.) The Little book of Chanel from Zgallerie, and some delightful homemade Eggnog Macarons, which I pulled from my frozen holiday stash!

The recipe for the Eggnog Macarons was found on South each Primal and I’m super thrilled about it! The instructions are simple and straight forward with measurements already converted, for those of us who don’t already own scales (like myself). If you’re still learning the ins and outs of French Macarons (like myself),  I would highly reccommend this recipe! I will admit, the more practice you have with the macarons, the less difficult they become, but I have to credit the recipe for the way they turned out. No cracks, good sized feet and a pretty circular shape too. So major!!

And for the filling…I swapped out the regular butter for vegan butter and eggnog for coconut milk eggnog to make them dairy free. Yes, I know they are eggnog macarons, and holidays are over but this recipe is so worth holding onto, or of course making and stashing away in your freezer as I have.

I’ve actually gotten into a habit stashing away macarons in the freezer since they pretty much happen to make everything better! Wouldn’t you agree?!

What’s your favorite way to celebrate the arrival of the weekend? Are you a football fan? I definitely am and I’m looking forward to watching the hawks beat the panthers Saturday evening! Mammogram Party

Earlier in October I took part in an annual Mammogram Party in my home town. This was an event put together locally to help raise awareness about breast cancer and provide knowledge and important info to women about annual screenings. Those who attended were able to schedule their screening appointments while also enjoying prizes, goodie bags treats, hair extensions and plenty of shopping from some fabulous vendors.

The event lasted from 9-3 pm and I had my Posh Little Designs booth set up, with many products on display and for sale from my online shop. Everything from cookie cutters and baking cups, to cupcake liners, paper straws, cupcake toppers and much more. I also baked up a batch of sugar cookies in themes to match the event which were given away for donation. Since most of my business is online based, it was refreshing to speak to customers face to face and interact on that level. I enjoy both aspects very much!

For this event I again chose a mostly white backdrop, and tied in shades of black, pink and silver through my products and samples. I hung tassel garland in textured white, displayed simple white roses in my most favorite goblets from the Oh Joy! For Target party collection, and once again took advantage of the wonderful free awareness prints from Heather of Chickabug.

 I’ll be donating 20% of all proceeds from the event, in addition to sales of awareness themed and pink products from the shop for the month of Oct. to a local non-profit breast cancer organization known as Team Julia. October Events

I can hardly believe we’re halfway through October! It’s been such a busy month already with 2 events and many behind the scenes projects that I’ll have to share with you in the coming weeks!

Over the weekend I completed 1 of two Breast Cancer Awareness Events for the month. It felt great to come together with other small businesses in the community for such a wonderful cause! Together we collected an awesome sized donation for Team Julia!

Here’s some of the products I had for sale and the sweet cookies I baked for the occasion. Everything from sprinkles and paper straws, to baking cups, cupcake liners, cupcake toppers, cookie cutters and more!

I used plenty of white for my display  because I’m absolutely obsessed with it right now. I tied in pops of pink through products and fresh roses for the pink awareness theme and  used my favorite collection of vintage milk glass dishes to display many of the products.

I’ve got one more awareness event this Friday at a local imaging center. They’ll be offering free mammograms to women 40 and over in addition to many free prizes and giveaways, while providing information and raising awareness about breast cancer. It’s another fundraiser I’m thrilled to be a part of!

Red Velvet Ice cream Sandwiches (V)

It’s officially Summer and to kick off the first weekend I’ve made a frosty treat perfect for the warm temps and sunshine! No better way to cool off than with ice-cream, but not just ordinary ice-cream, I’ve placed it between two homemade graham crackers to make a decadent sandwiched delight…with a little twist of course. This twist that I speak of is in the form of red velvet because I just happen to have some emulsion sitting in the pantry waiting to be used, and also because everything tastes better flavored with red velvet…wouldn’t you agree?! Not to mention, the color! The red makes these frosty sandwiches a great dessert option for the upcoming 4th of July holiday and If you’re not convinced just yet, I’ve also made them vegan and free of soy.

Red Velvet Ice Cream Sandwiches (V)

 There aren’t many ways you can do ice-cream sandwiches wrong. The flavor of the cocoa in the less sweet graham crackers truly comes through which balances well with the sweetness of ice cream.

You can easily use dairy in this recipe if you prefer. Simply replace all vegan ingredients with butter/milk/ice-cream.

Ingredients/Supplies – Makes 12

1 Pint of your favorite vegan Ice-cream (I prefer Coconut Bliss)

24 Red Velvet Graham Crackers (see recipe below)

Red or Navy Bakers Twine

1 sheet of parchment paper

Small butter knife

Instructions

Remove your frozen vegan ice-cream from the freezer for about 5-10 minutes to give it some time to soften.

Take a heaping spoonful of ice-cream and sandwich it between two of the cooled Red Velvet Graham crackers.

Run a knife or similar with a smooth edge along the complete outside of the ice-cream sandwich to remove any excess.

Repeat these steps for all 12 sandwiches and promptly place back into the freezer before they melt!

Once ice-cream sandwiches are frozen you can wrap them in bakers twine and store them back in the freezer until ready to enjoy!

Vegan Red Velvet Graham Crackers

The recipe for these graham crackers is adapted from the brown-eyed baker. If you don’t have red velvet emulsion, the cocoa powder will give the graham crackers the rich red velvet taste, so I recommend adding a natural red food coloring until the desired shade of red is achieved.

1 1/4 cups flour

1 1/3 cups graham flour

1/4 cup cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup of vegan butter or coconut spread (I used half and half)

2/3 cups dark brown sugar

1 tablespoon honey

2 tablespoons Red Velvet Emulsion (or natural red food coloring added until the desired color is achieved)

1 fork, for puncturing the tops of each cracker.

A small mouth wine glass, or round cookie cutter.

Instructions

In the bowl of a stand mixer, combine vegan butter/coconut oil, brown sugar, honey and red velvet emulsion (or natural food coloring) and mix until light and incorporated.

In a separate bowl, mix together both flours, baking soda and salt.

Pour flour mix into the butter and sugar and mix on med high until dough forms. If your dough is a bit dry and isn’t forming together, it may need more moisture.

Note: If your dough comes out a bit dry, do not fear. Add a few drops of coconut milk, or dairy milk if you’re non-vegan until the dough comes together and forms in your stand mixer.

This would be the time to add coconut milk or milk of choice.

Once dough has formed, wrap it in saran and place it in the fridge for at least 1 hour.

Meanwhile, line 1 baking sheet with parchment paper.

Once dough has chilled, preheat oven to 350 degrees.

Lightly flour a cleaned work surface, and roll dough out to about an 1/8 of an inch thickness.

Using a 3 inch round cookie cutter, or small mouth wine glass, cut dough into circles and transfer onto lined baking sheet.

Place the circles of dough onto the baking sheet and puncture the tops of each cracker two times with the marks of a fork.

Bake in the oven for 7-10 minutes.

Remove, and allow to fully cool. Once they’ve cooled, these red velvety babes are ready for ice-cream!

Make them in advance to enjoy for summer celebrations including the 4th of July! They freeze nicely and are a simple treat your guests will rave about.

Think Pink

Fall is officially upon us and I have all things pink on the brain. Not only because it’s a rather trendy color for the season but also because the color pink is the designated hue for Breast Cancer Awareness, and October just happens to be Breast Cancer Awareness Month. Organizations from all across the US will be participating in the fight against breast cancer by going pink and I’m honored to be participating as well!

This year, I’ve been invited to be one of the vendors at a local Mammogram Party in my hometown. The event will offer mammograms by donation to women without a prior appointment, while also raising awareness about the disease, and helping in the fight for a cure.

I’ll be putting together a display of breast cancer awareness baking and party supplies for sale locally and also in limited quantities in my Etsy shop for the month of October. Not only can we bake for a cure, but we can also celebrate the strength and courage of all women and families affected, while also supporting a great cause.

With the event just a few weeks away, and breast cancer awareness such a huge part the coming month, I’ve put together a board that I can draw from to style and design my vendor space. I hope to also provide inspiration to everyone affected by the disease.

For the vendor event, I’ll be working with a color scheme of pink and gold/silver. The setup will be all white and clean with a few small floral arrangements and pops of pink in a variety of shades. I’ll be carrying everything from cookie cutters, to paper straws, baking cups, sprinkles and more. As I work on projects for the event, I’ll be sure to share them here, so you can see how it all comes together!

Happy Friday everyone and happy Summer Solstice!

 To kick off the very first day of my favorite season, I’ve put together a collection of some of the summer worthy baking accessories available now in the Posh Etsy Boutique.
