Red Velvet Ice cream Sandwiches (V)

It’s officially Summer and to kick off the first weekend I’ve made a frosty treat perfect for the warm temps and sunshine! No better way to cool off than with ice-cream, but not just ordinary ice-cream, I’ve placed it between two homemade graham crackers to make a decadent sandwiched delight…with a little twist of course. This twist that I speak of is in the form of red velvet because I just happen to have some emulsion sitting in the pantry waiting to be used, and also because everything tastes better flavored with red velvet…wouldn’t you agree?! Not to mention, the color! The red makes these frosty sandwiches a great dessert option for the upcoming 4th of July holiday and If you’re not convinced just yet, I’ve also made them vegan and free of soy.

Red Velvet Ice Cream Sandwiches (V)

 There aren’t many ways you can do ice-cream sandwiches wrong. The flavor of the cocoa in the less sweet graham crackers truly comes through which balances well with the sweetness of ice cream.

You can easily use dairy in this recipe if you prefer. Simply replace all vegan ingredients with butter/milk/ice-cream.

Ingredients/Supplies – Makes 12

1 Pint of your favorite vegan Ice-cream (I prefer Coconut Bliss)

24 Red Velvet Graham Crackers (see recipe below)

Red or Navy Bakers Twine

1 sheet of parchment paper

Small butter knife

Instructions

Remove your frozen vegan ice-cream from the freezer for about 5-10 minutes to give it some time to soften.

Take a heaping spoonful of ice-cream and sandwich it between two of the cooled Red Velvet Graham crackers.

Run a knife or similar with a smooth edge along the complete outside of the ice-cream sandwich to remove any excess.

Repeat these steps for all 12 sandwiches and promptly place back into the freezer before they melt!

Once ice-cream sandwiches are frozen you can wrap them in bakers twine and store them back in the freezer until ready to enjoy!

Vegan Red Velvet Graham Crackers

The recipe for these graham crackers is adapted from the brown-eyed baker. If you don’t have red velvet emulsion, the cocoa powder will give the graham crackers the rich red velvet taste, so I recommend adding a natural red food coloring until the desired shade of red is achieved.

1 1/4 cups flour

1 1/3 cups graham flour

1/4 cup cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup of vegan butter or coconut spread (I used half and half)

2/3 cups dark brown sugar

1 tablespoon honey

2 tablespoons Red Velvet Emulsion (or natural red food coloring added until the desired color is achieved)

1 fork, for puncturing the tops of each cracker.

A small mouth wine glass, or round cookie cutter.

Instructions

In the bowl of a stand mixer, combine vegan butter/coconut oil, brown sugar, honey and red velvet emulsion (or natural food coloring) and mix until light and incorporated.

In a separate bowl, mix together both flours, baking soda and salt.

Pour flour mix into the butter and sugar and mix on med high until dough forms. If your dough is a bit dry and isn’t forming together, it may need more moisture.

Note: If your dough comes out a bit dry, do not fear. Add a few drops of coconut milk, or dairy milk if you’re non-vegan until the dough comes together and forms in your stand mixer.

This would be the time to add coconut milk or milk of choice.

Once dough has formed, wrap it in saran and place it in the fridge for at least 1 hour.

Meanwhile, line 1 baking sheet with parchment paper.

Once dough has chilled, preheat oven to 350 degrees.

Lightly flour a cleaned work surface, and roll dough out to about an 1/8 of an inch thickness.

Using a 3 inch round cookie cutter, or small mouth wine glass, cut dough into circles and transfer onto lined baking sheet.

Place the circles of dough onto the baking sheet and puncture the tops of each cracker two times with the marks of a fork.

Bake in the oven for 7-10 minutes.

Remove, and allow to fully cool. Once they’ve cooled, these red velvety babes are ready for ice-cream!

Make them in advance to enjoy for summer celebrations including the 4th of July! They freeze nicely and are a simple treat your guests will rave about.

An auction for Kylie

You may remember a few weeks back I shared information about the little angel Kylie who has been battling neuroblastoma. Neuroblastoma is childhood cancer, that can cause deadly tumors throughout the bodies of infants and children under the age of 5. Kylie has stage 4 high risk neuroblastoma.

I learned about this little angel about a month ago after being contacted by Amie Salter on Etsy to take part in an upcoming Instagram Auction held @cupcakesforkylie with all proceeds going directly to Kylie and her family. Kylie immediately captured my heart! Hundreds of vendors including myself will be donating items and taking part in this event happening this Sunday June 22nd from 7am-7pm.

I’ll be donating baking products from the Posh Etsy shop for the event and will also be donating a portion of all sales in my shop running through mid July.

Thousands of people have banded together in continuous prayer and positive thoughts for this little angel and her family. It is quite miraculous to witness how far she’s come. Kylie exudes the spirit of a warrior with incredible courage and will to live. She and her family have become such an inspiration for me! Their faith and strength is nothing short of amazing!!

I feel honored to take part in this event and I hope you come join us to help this family who is so incredibly deserving!!

Infused H2o

Today I’m sharing 2 new ways to add a little flavor and a lot of posh to your plain old water. Of course we all know how important water is for our bodies, but it’s so easy to grow tired of it. Especially when you drink it day in and day out as I do. But with just a few subtle additions, you most certainly won’t dread getting through those 8 glasses every day! Lightly flavored and so easy to customize, based on the fruits and veggies you love.

In addition to the refreshing flavors, infused water, which can also be known as detox water, has many health benefits. Depending on the fruits or veggies you choose to infuse, it can aid in weight loss, digestion and toxin removal, to name a few. Totally worth it!

I’ve enjoyed so many different flavors lately! My mom made a lemon and rosemary infusion that I loved and my most recent favorites are Mango + Lime + Cilantro, and Grapefruit + Rosemary. I usually drink a mason jar full after finishing up with pilates for the day.

If you’re not a fan of the herbs, feel free to just stick with just the fruits as they have a tendency to overpower.

I just happen to really love these flavor combinations! The citrus notes paired with the mango’s sweetness and the freshness from the cilantro make such a delightful trio.

Ingredients/supplies

1 ripe small mango sliced.

1 lime sliced into rounds.

1 small bunch of cilantro.

1 pitcher that holds 24-32 ounces of water.

Purified water.

Instructions

Simply place the Mango into the pitcher and fill with purified water.

Place in the fridge and allow mango to infuse for at least 2 hours.

Add limes & cilantro at the 1 1.5 hour mark.

Serve in your favorite glasses and add a straw or 2 for a fun touch!

Grapefruit, Rosemary Infused H2o

This earthy citrus duo is surprisingly refreshing and addictive.

Ingredients/supplies

1 small grapefruit peeled (to avoid bitterness) and sliced into rounds.

2 sprigs of rosemary rinsed well and patted dry.

1 pitcher that holds 24-32 ounces of water.

Purified water.

Instructions

Place grapefruit into the pitcher and fill with purified water.

Place in the fridge and allow grapefruit to infuse for at least 1 hour.

Add the rosemary at the 45 minute mark.

Serve in your favorite glasses and enjoy!

And of course this infused water not only tastes wonderful, but also looks marvelous when served at summer parties and gatherings, as the fruit and herbs add beautiful color in addition to flavor! Graduation & DIY Chocolate Chalkboards

There’s nothing I love more than giving edible gifts, and last week when my oldest daughter and I came across the DIY chocolate chalkboards found on the Dollhouse Bakeshoppe Blog we knew they would make an adorable thank you’s for her preschool teachers, in preparation for her graduation last Saturday.

Reality most certainly set in during the ceremony. I still remember 2 years ago around this time when we enrolled her into preschool, and I remember the tears I wept when we dropped her off for the first time. The way that she told us she would be fine, and ran off to play before we even walked out the door. Now to see how she’s blossomed and transformed into such a beautiful little being, makes me tear up over and over again.

We surely do have the teachers to thank. They have become a big part of our lives, playing a role in her growth and development over the last few years, with guidance and instruction helping shape her into the girl she is today. Both caring and compassionate, a lover of arts and crafts, a thinker, and great role model to her fellow classmates, and so much more. They most certainly deserve to be honored for all that they do. So in addition to the chocolate strawberries we made for the graduation, we also made these dark chocolate chalkboards for 5 of her teachers, using instruction from the Dollhouse Bakeshoppe Blog’s tutorial.

These little dark chocolate bars really do look like mini chalkboards. Wouldn’t you agree?! The addition of the jimmy sprinkles used as decorative chalk is such a brilliant idea. I die…seriously! And they make such perfect heartfelt gifts, that teachers will truly appreciate. I know my daughter’s teachers did!

Although I used Lindsay’s instruction as a guide, I chose to melt my chocolate into molds for a decorate frame and finish. I did not use the caramels to frame the chocolate however if you do not have mold on hand and would like to use the caramel frame, visit her blog for instruction by following the highlighted link above.

DIY Chocolate Chalkboards

Ingredients/Supplies

Chocolate mold (optional or you can just use the back side of the bar itself to create your message this is probably a faster option) You can find the mold I used in the Posh Etsy Shop.

Four 4 oz bars of quality dark chocolate

1/2 cup powdered sugar

white jimmy sprinkles

toothpick

brand new paint brush washed and dried

parchment paper

ziplock bag

cellophane bags

bakers twine

Instructions

Heat the chocolate in a double boiler or in 30 second intervals in the microwave until fully melted.

Pour melted chocolate into ziplock back and snip the corner.

Pipe melted chocolate into molds and once finished gently tap the mold against a hard surface to evenly distribute.

Place in the fridge until cooled, about 1 hour.

Remove from fridge and flip mold upside down onto a sheet of parchment paper to remove the chocolates.

With a toothpick, begin engraving your message into the molded chocolate. Remove excess chocolate shavings with brush.

Fill the engraved chocolate with powdered sugar using the paint brush or similar to pack it down, so it’s evenly distributed throughout the entire message.

Brush off the remaining powdered sugar which will also give the chocolate the “chalkboard” look.

Towards the bottom of each bar engrave two spaces large enough to hold the “chalk” or white jimmy sprinkles. Gently push them into place.

Repeat these steps for each chocolate bar.

Once all bars are engraved and completed, place them each in their own cellophane bag for packaging, and finish with bakers twine and handmade labels.

I would caution against placing the finished chocolate back in the fridge as the moisture can affect the look and texture of the powdered sugar. Leave them at room temperature, in a cool dry place.

3. My husband and I are high school sweethearts and have been together since the ages of 15 and 17.

4. I do pilates regularly.

5. I’m not much of a fan of red wine. I prefer white, or sparkling wine.

6. I obsess over parties and weddings and would plan mine again in a heartbeat if I had the chance. I think a vow renewal is on the horizon.

7. I love house, EDM and jazz.

8. I might be slightly addicted to french macarons.

9. I believe every room should have a chandelier, or a tufted piece.

10. Currently digging white on white.

11. I can come up with any excuse to throw a celebration or make a sweet treat, or craft. No joke.

1. Where would you travel to if you can pick up and go right now? Most definitely Paris. It’s been on my list of places to visit for years now and I cannot wait to travel there and experience all that the city has to offer.

2. Who is your role model and why? My mother without a doubt. She has taught me to be kind-natured, loving and empathetic and has instilled in me great morals and values. She is the reason I am the woman I am today and has blessed me with some amazing creative genes.

3. What is your favorite recipe? By far my favorite is the homemade mac and cheese. A family recipe that my mom came up with years ago. We only make it twice a year during Thanksgiving and Christmas, and it’s the few times that I cheat and go against my dairy free diet. It’s way too good to pass up!

4. What recipe or craft would you like to see on my blog (Crafteaheart). All of your recipes look amazing Thuy. How about an iced tea recipe? As for crafts, the crepe paper flowers were fabulous. I’d love to see a typography related craft or DIY.

5. What is a must read/watch book/movie on your list? I wish I had more time for both of these. I can’t remember the last time I did either. Random I know, but my favorite movie has always been Dirty Dancing…lol! As for books, I’m going to pick: I Know Why the Caged Bird Sings, in honor of the late and phenomenal Maya Angelou.

6. Name two things on your bucket list. It would definitely have to be traveling and more traveling overseas. France, Spain, Italy, Portugal, Greece to name a few.

7. What is your favorite font and why? I love me some calligraphy and hope to take a class some day! My favorite font is currently: Young and Beautiful.

8. List what you have learned so far via blogging. I have been blogging for a few years now, and still feel like I have so much to learn, but have discovered much about my strengths and weaknesses in the process. I’ve developed more photography related knowledge, but still need to gain a better understanding of SEO. If there is one piece of advice I could give, and one of the most important things I’ve learned about blogging, is to be personal, inviting, and always yourself.

9. Which category has the most visits on your blog today? It’s a toss-up between DIY’s and Parties.

10. Do you collect anything? If yes, what? Well, I seem to have a neverending supply of party decor, so I guess you could say that I collect that. When I have more pantry space, I would love to start a collection of cake stands.

11. What is your favorite type of outfit? I usually mix and match trendy pieces with go-to items in my closet. high-waisted denim is my favorite right now as are patterned bottoms. I usually pair them with a blouse and blazer or a leather jacket.
