Sophisticated S’mores

Since Fall officially starts on Saturday I thought it would be nice to make an end of summer treat as a farewell to the season. In my opinion, nothing says farewell to summer better than the s’more, but since I’m not much for tradition, I’ve added twist to the original to make them ideal for a sophisticated celebration. Homemade s’mores using vegan graham crackers, vanilla bean marshmallows and dark chocolate with a touch of sea salt. The ingredients take these s’mores from ordinary to posh. They are truly a must try!

Sophisticated S’mores

Homemade marshmallows skewered and toasted over an open flame (see below for recipe)

Dark chocolate broken into squares with sea salt

Wood sticks or skewers

Open flame for marshmallow roasting.

Sandwich toasted marshmallow and chocolate between two homemade graham crackers.

Homemade Vegan Graham Crackers

1 1/2 cups all purpose flour

1 cup whole wheat flour

1/2 teaspoon salt

1 teaspoon baking powder

1 cup Earth Balance coconut spread at room temperature (or 2 sticks of butter for non vegan)

3/4 cups light brown sugar

parchment paper

Add first 5 ingredients into a bowl, mix together and set aside.
Combine coconut spread, brown and brown sugar in the bowl of a stand mixer and mix on medium speed for a few minutes until fluffy.
Reduce speed to low and add dry ingredients. Mix until combined.
Once combined place dough between two sheets of parchment paper and roll to 1/8″ thick.
Move rolled dough to refrigerator to chill for 10 minutes.
Preheat oven to 350.
Line a baking sheet with parchment paper.
Remove dough from fridge and cut into shapes using a cutter of your choice.
Bake for 10 minutes until the edges are golden brown.

Homemade Vanilla Bean Marshmallows

I made homemade marshmallows last year to go with my hot chocolate mixes. They are easily the best marshmallows I’ve ever had, and I’ve since discovered that they toast beautifully for s’mores. I love how simple they are to make and that they can be done in advance. Find the recipe for them here.

Posh little tip

Throwing an end of summer celebration? Set up a s’mores bar, with homemade graham crackers, marshmallows, and an assortment of chocolate. Your guests will not only love the idea, but they will love all the flavors and options they get to choose from.

For kid friendly s’mores, use milk chocolate instead of dark.
